Changing my menu tonight...
Wasn't feeling pork loin.
I'm trying a Stuffed Beef and Black Bean Tamale Pie...and I actually have EVERYTHING I need in my pantry.
Maybe it's time for a blog post!

OK it was friggin amazing!!!!!!!!!!!! And sooooooooooooooooooo easy!!!!
I wanted to take a pic, but DH ran a train on it before I could get one 
You take a box of cornbread mix and combine it with cheddar cheese, green onions, 1/2 c. sour cream and 1/4 c. water. Spread half the batter in the bottom of a pie pan or brownie pan.
Brown ground beef and add taco seasnoing. Add a can of drained black beans and a can of drained corn.
Layer the meat mixture and top w/remaining batter (I just dolloped it on top). Bake at 400 for about 20 minutes. Garnish w/sour cream, green onions and cheese.
SOOOOOOOOOOOOOOOOO good. This is gonna become a staple!

Sounds delicious. If only I had cheddar in the house, we would not be eating meatloaf tonight! I will definitely be trying this soon!
