Pre Heat oven to 350

Throw thick chicken cutlets in a cassarole dish and bake for about 30-35 minutes.

Take out of the oven and top the chicken breasts with 1/2 can of black beans, jar of salsa, and shredded cheddar cheese and put back in the oven for 10 minutes.

I will usually cook some rice to go with it.
I will also put a dollop of sour cream on my plate to go with it.

YUM!!

I make variations of panko chicken all the time. You can use breasts or strips. Its very yummy and easy.

here is a recipe:

6 Chicken Tender Strips (thawed) or 3 breasts
1/2 Cup Dijon Mustard
1/2 Cup Mayonnaise
1 Package Panko Bread Crumbs (asian section at market)

Preheat the oven to 350 degrees. Mix dijon and Mayonnaise together. Dip each chicken tender in mixture then in panko crumbs. Place in a baking dish ungreased. Bake uncovered at 350 for 35 minutes or until the tips of the crumbs begin to turn light golden brown.

This is so super easy - most of the ingredients are spices so don't be overwhelmed by the ingredient list...

Chicken Scampi

·1/2 cup butter
·1/4 cup olive oil
·1 teaspoon dried parsley
·1 teaspoon dried basil
·1/4 teaspoon dried oregano
·3/4 teaspoon salt
·4 cloves garlic, minced
·1 tablespoon lemon juice
·4 boneless chicken breast halves, sliced lengthwise into thirds

In a skillet heat the butter or margarine and oil over medium high until the butter/margarine melts. Add the parsley, basil, oregano, salt and garlic and mix together in the skillet. Stir in lemon juice.

Then add the chicken and saute for about 3 minutes or until white. Lower the heat and cook for about 10 to 15 minutes or until chicken is cooked through and the juices run clear. More butter/margarine can be added if needed.

*Notes: To make it even easier, I get all the dry ingredients together in a pinch bowl first – the parsley, basil, oregano, and salt. That way I can just throw it in the pan once the butter’s melted. I like garlic and don’t actually mince the cloves myself so I usually toss in a tbsp of chopped jar garlic. You can also use white wine instead of lemon juice.

I made an easy Chicken Marsala tonight. Pound a chicken breast thin, and put salt and pepper on it. Dredge in some flour. Cook the chicken in a pan over medium heat, about 2 minutes on each side. Take the chicken out and keep warm in oven or with foil over it. Take 1/2 cup of wine and deglaze the pan. Reduce in half and then add 1/2 cup of chicken or beef broth. Reduce in half again. Add a bit of Wondra flour to thicken if you like (cornstarch would work too). Serve over angel hair pasta.

I made this last week

I took the chicken and sprinkled a little of taco seasoning on them, then put 2 tbs of salsa on each and toped with a mexican mix low fat cheese, backed at 375 for 25-30 minutes.

I served with brown rice and blue corn chips and salsa - my DH LOVED it.

I did something similar last weekend:

I made this Salsa Chicken recipe and used this recipe for Taco Seasoning. We ate it with sour cream and tortillas on the side.

Mock-Olive Garden Chicken Gnocchi Soup

Looked up a "copy cat" recipe - didn't have enough time so I mock'ed it...

1 large can* Cream of Chix soup
1 large can* of water
1 small can other cream soup (I used mushroom garlic)
1 package (16oz) gnocchi
1 pound cooked chicken (rotissary chix works well)
2 handfuls chopped baby spinach

Heat soup, add chicken.
Boil gnocchi for 2 mins (per my package direction). Add to soup. Add spinach.

Not sure what the spinach adds but it doesn't take away from anything either

I would just throw it in a baking dish with salt & pepper, fresh rosemary, white wine, lemon juice & zest, garlic and bake. Nice and easy!

This is another one I like to make:

Ingredients:
Chicken breasts, cleaned, filleted
1-1/2 14oz cans chicken broth
2 cups heavy whipping cream
2 cups sliced fresh mushrooms
1 tablespoon fresh lemon juice
1 tablespoon olive oil for cooking
2 tablespoons butter or margarine for cooking
1/2 cup white wine for deglazing
Sea salt, freshly cracked pepper, garlic salt for seasoning chicken.
3 Tablespoons fresh chopped parsley or dried parsley flakes

DIRECTIONS
Season both sides of chicken breast fillets lightly with salt, pepper, and garlic salt.
Preheat skillet over medium high heat. Add oil to skillet, and when oil is hot, cook breasts until browned, then turn over and repeat until browned on both sides (usually only a few minutes per side). Remove chicken to plate. Deglaze pan by adding white wine, then reduce heat and simmer until reduced and thickened somewhat, then pour resulting liquid over chicken. Add butter to pan, melt, then add mushrooms and saute, stirring frequently, until golden brown. Add chicken broth and cream to pan, stir. When sauce starts to bubble, reduce heat to low. Add parsley to sauce and stir. Add lemon juice and stir. Add previously-browned chicken breast fillets and reserved liquid (from deglazing) to the cream sauce. Cover skillet with a lid and allow chicken to cook through (this depends on how thoroughly you cooked the chicken when first browning the chicken—the final cooking usually takes only a few minutes for me.) Season with fresh cracked pepper and salt to taste.

salad dressings make the best marinades!

I use either caesar dressing or italian usually but I've used pretty much everything under the sun!

whats the difference between panko and regular bread crumbs?

I usually just take the chicken, bake in in the oven - put foil on the pan..... sometimes throw on bbq sauce and shredded cheese, other times mustard and bread crumbs.
