Re: Anyone else on the South Beach diet???
I made a lowfat Lime Cheesecake today. Sort of the Atkins recipe - South Beach-a-sized...I added lime juice and a little jello powder b/c it wasn't limey enough.
It's cooling now.
I also bought soy wraps @ Hmart which are great for making wraps, tacos etc.

Re: Anyone else on the South Beach diet???
I am so glad I found this. I started the SB 3 days ago. I did this diet 5 years ago and had good results. I decided to try it again. I feel like it's easier this time than the last time. I will share some of my recipes soon. You're all doing great. keep up the good work!!

Re: Anyone else on the South Beach diet???
Hi! I have not weighed in days---been out of power since Saturday and I am not staying at home. I also have AF. I have pretty much been able to stick with SB though...miraculous enough! I had a glass of wine last night----really needed it---other than that I have been sooo good!
I hope everyone else is doing well.

I'm happy to be back on the Beach. I still have AF, but lost a pound as of today. Today marks day 2 of being back on!!!
Soo sorry to hear that you don't have power, I'm sure a glass of wine was def. needed. Hope you get power soon :)

Power has been restored. I lost 1.5 lbs in those 4 days. Not too bad for being out of my home & not making my own meals. I am hoping to get back on track this weekend when I can start to prepare some food again.

Re: Anyone else on the South Beach diet???
I feel like I have been so strict. I am on day 11 and only down 7.4lbs. Does this seem right? I am getting so discouraged.

I think that is really goood :) Sometimes I loose a lb a day, but usually go a few being the same.
7.4 in 11 days is good work :)

Re: Anyone else on the South Beach diet???
Ok so my lime cheesecake sucked. It was bland. I really needed the key lime juice...so I made a Pumpkin Cheesecake and WOW was that good! I just had a small piece for breakfast.
Not sure how Beachy it is BUT its 2 bars fat free and lowfat cream cheese, 1 can Pumpkin, 3 eggs, splenda, vanilla and spices. SOO delish.
I can post the recipe if anyone wants.
You can also make a crust from toasted pecans but it's too much work and too much fat.

I snack on almonds, Jello-Puddings, cheeses and roll-ups. Sometimes a nice glass of V8 hits the spot for me.
I'm on Day 8 today and lost 6 lbs so far...my goal is 12!

Bump for Heather
Thanks S...
I just made the best dessert for me and the DH...
3 Minute Flourless Chocolate Cake 1 T. Smart Balance or other approved margarine 2 T. unsweetened cocoa powder 1 egg 2 T. sugar free syrup (like DaVinci) or skim milk 4 t. Splenda
In a small microwave safe bowl or ramekin, microwave margarine for 15-20 seconds until completely melted. Whisk in cocoa, then egg, then syrup (or milk) and splenda. Microwave on high for about 1 minute (watch closely – may need less time). Cool completely or serve slightly warm.
It was very satisfying...needed a chocolate fix...

Re: Anyone else on the South Beach diet???
I want to lose 30 pounds. I did this diet a few years ago and it worked really well. The only problem I find is that it takes TIME preparing these dishes and if your DH wants other food... I get sidetracked. Any tips there? I am going to start phase 1 this weekend.

The first time I did South Beach I stayed on Phase I for about 4 weeks or so. I then started to slowly incorporate small amounts of rice, bread, or pasta back into my diet..
For me it became a new way of eating...lean meats and vegetables. If I was going to have a "pig out meal" it was usually on the weekends and then I would do Phase I for a couple of days...
So I guess I essentially stayed on the diet and moved on to the maintenance part of it..

For me, this time around, I made DH do the first 2 weeks with me....
After the 2 weeks DH is going to move on to Phase II but Im sticking with Phase I for another 2 weeks..I'll just make us the same meal but, for example, if we are having fish & veggies I'll make him couscous too...If I make sauce and meatballs I'll have spaghetti squash and he'll have actual pasta..etc..
