Can you help a convert to meat eating??
I have been a vegetarian for most of my life, but have very recently started to eat some chicken and turkey again in an effort to get some more protein in my diet (I can only eat so much cheese, eggs and beans!).
Can anyone help me by suggesting some ways to prepare/meal ideas for either chicken breasts, or ground turkey or chicken? Just to let you know, I have a bit of a texture/taste issue with meat (which is the main reason I don't usually eat it) so I usually either burn the cr@p out of it (I did this last week and DH did not enjoy) or do something to hide the texture (like crusting the outside of my chicken with shake and bake...but that gets old quick). Any ideas would be greatly appreciated!!

I'm like you--I eat very little meat but still include some in my diet.
I've been making sloppy joes with ground turkey from a recipe I found on allrecipes.com. MY DH likes it--I've never had sloppy joes before then.
I'll make "salsa chicken" in the slow cooker--chicken, salsa, and that's it. THen we shred it and make quesadillas, or put it over rice, or make nachos.

How about some chili. You can use ground turkey or chicken and you can still get the beans in too.
Turkey meatballs in sauce.

I have only eaten chicken and Turney for the past 18 years, no other meats.
I try to take regular recipes with meat and turn them into chicken or turkey recipes. Anything with ground beef can be made with groung turkey or chicken- tacos, shepard's pie, meatloaf.
I love turkey sausage! Sausage & peppers or I take the meat out of the casing and saute it with veggies over pasta with garlic & oil or sauce.
I've even found turkey products that mimic meat- like turkey "chops", similar to pork chops, but taste like turkey..yummy!
I prefer turney over chicken- but lots of times I'll just take some chicken cutlets and invent marinades or sauces for them. I like to use white wine, worchester sauce, teryaki sauce, bbq sauce, different marinades you will find in the grocery store.
I sometimes have texture issues with chicken as well. I find that keeping the peices smaller (bite size) makes it easier.
