What can i do w/ a rotesserie chicken??
I see so many of you mention it but im cluelss in the kitchen. Also- i dont like chicken salad so that is OUT.

cut up the chicken and use it for quesadillas or tacos...also, you can cut up some peppers and add it to pasta with a light sauce of lime juice, cilantro and some olive oil...hth..enjoy..I love rotisserie chicken!

Yep! thats what I do too. You can flavor it with anything you like.
My favorite thing to do is make chicken pizza.
Pita bread, fresh tomatoes, fresh basil, sprinkle a little salt and olive oil, and cover with mozzarella (if using fresh mozzarella, salt more liberally in previous step) and sprinkle with chicken, pop in toster oven or regular oven and heat till cheese melts... yummy!
Something else I do, but I don't know what to call it:
shred into chunks by hand and saute it with lots of onions and garlic, season it with anything you like, add any veggies you like (tomatoes are my fav), and put it on top any starch: mash potatoes, pasta, in sandwich, etc.

Chicken a la king
Bring to a slow boil one can of mushroom soup and one cans worth white wine. Add shredded chicken. Cook for about 20 minutes or so until the wine evaporates. Serve over rice.

we just eat it the way it comes most of the time!
we get ours from Costco and it's $4.99 and makes at least 2 full dinners. I just switch up the sides that we serve it with... rice, potatoes, cous cous, roasted broccoli, sauteed green beans, etc.
sometimes we slice up the breast and put it over any kinds of salads...
or we use it for enchiladas, quesadillas, tacos, etc.

I make chicken curry. I mix it with mayo, curry powder, raddichio, lime juice, honey and cashews. I serve it on ciabatta. Delicious!!!
