riddle me this regarding leftovers...

so, I have left overs from this weekend.

a half tray of stuffed shells made saturday.

and a flank steak that has been marinating since yesterday.

I don't want to let the shells sit too much longer, but I am not sure if the marinaded steak will go to crap if I leave it sitting in the stuff for another day.

so, what would you make tonight vs. tomorrow.

3 day old stuff shells
or
1 day old marinating steak.

what would you serve tomorrow?

I would cook the steak today

and have a few shells

and take some left overs for lunch tomorrow-

It depends on when the steak was taken out.

If the steak was taken out Saturday morning or earlier - I'd probably make it tonight.

If the steak was taken out yesterday - I'd do shells today and steak tomorrow.

we just bought the steak yesterday. It hasn't been frozen.....my main concern with the steak is...is it possible to OVER marinade? I mean, I guess I could remove the steaks from the marinade so they aren't absorbing any more liquid and still make them tomorrow.

susan, the party went well. the guests ate, drank, and were merry.

my baby will never be cold.

You can't overmarinate the steak. I had steak in sofrito for days and it was heavenly.
