Mexican Rice

Mommy's Recipe. Growing up in South Texas, this mexican rice has been a staple sidedish.
Ingredients
- 1 1/2 tsp. mixed spices (peppercorn and cumin)
- 1 C. Rice (long grain)
- 1 small can of tomato sauce
- 1/4 C green bell pepper chopped
- 1/4 C onion- chopped
- 2 cloves of garlic
- 2 Cups of Hot water or Chicken Broth
- 2 teaspoon salt
Instructions
In a skillet, heat oil and saute rice to a golden brown. (make sure it does not burn!)
Add tomato sauce and water. Add spices, onion, bell pepper, salt to taste, and garlic. Bring to a boil for about 2 minutes. Reduce heat and Cover tightly and simmer for about 20 minutes. Do not stir the rice.
Serve With
with your favorite TEx-Mex dish. Enchiladas, tacos, ...
