What to serve a vegetarian on Easter?
I just found out another guest will be joining us for Easter, she is a vegetarian. Obviously she will not be eating ham, but I'm not sure what to make in addition. Any suggestions?

I'm actually making a zucchini lasagna (with meat sauce) but you could make it without. It was a huge hit the last time I made it.

Re: What to serve a vegetarian on Easter?
I was planning on doing a pasta course. I'll make it vegetarian but do I just serve it with the ham and everything else now?

What to serve a vegetarian on Easter?
I would serve the pasta course as a separate course and just buy a serving of eggplant parm or a stuffed portabella from Uncle G's to serve the one vegetarian when you do the main course. They can eat the sides that you make for your other guests as well.

What to serve a vegetarian on Easter?
Depends. Do they do dairy. I am a veggie and I do not do dairy either. I am not a vegan bc I do eat eggs. I wouldn't eat anything parm. As a veggie I find Easter to be the best holiday. Tons of fresh veggies that are in season, etc. I eat salads, veggies,

if you're on pinterest there's so many awesome veg recipes. I'm veg, i usually go for the pasta, or a quinoa salad/three bean salad if I don't want to blow up from pasta.
off my pinterest: lentil shepherd's pie cauliflower lentil taco salad caprese lasagna roll ups couscous with beans, avocado and scallions quinoa chili

What to serve a vegetarian on Easter?
I always tell people not to make a special "main course" for me. Honestly, with pasta course and sides, I am full. Eggplant parm as a pp suggested is nice if you want to have something special for them. I would ask your guest and see what they say.

Except I won't touch anything w/ sauce unless I know they did not cook any meat in it.

What to serve a vegetarian on Easter?
What are the side dishes? Can she make meal of them?
I am not allowed to eat any red meats as I have been treated for cancer and my doctor forbids them, but I often make a meal out of side dishes when a red meat is served. Pork in all forms is a red meat, as are lamb and beef.
If you are planning a starch and a vegetable simply make an extra vegetable side dish. That should be enough, especially as you are also serving a meatless pasta first. Vegetarians are used to adapting when guests. You do not have to change things too much.
However, some people cannot eat eggplant. Me for one. It doesn't agree with me. I have to skip it. My DD can't either, her mouth goes numb if she eats it and I know others who also have problems with it. I'd skip any eggplant unless you know the person likes it.

This! I am used to eating sides so it is no biggie. That being said, just make sure your sides are something the vegetarian can eat. My ILs had a 30th bday for my BIL and all the sides were made with meat. Even the freaking salad had meat in it (they are Italian). I ate a roll.

Re: What to serve a vegetarian on Easter?
Does she eat fish? That could be a nice main course addition. Otherwise, like everyone else says, just do a non-meat pasta and plenty of sides- salad, potato, 2-3 cooked veggies. You could also add more vegetarian friendly appetizers- crudités, hummus, stuffed mushrooms, baked Brie, spinach dip, etc...
