What's your typical vegetable dish for dinner?

I usually make salads, string beans, baked cauliflower and peas and carrots. What's your veggie dish?

I broil mushrooms, eggplant zucchini and radicchio. Olive oil salt pepper and oregano.

Baked Sweet Potatoes
Mashed sweet potatoes (my kids love it like this)
roasted peppers, onions, potatoes
Carrots
string bean salad with tomatoes
creamed spinach
roasted corn and black bean salsa

DH doesn't eat a lot of veggies, so it gets boring quick.

Boiled string beans with butter and shallots.
Sauteed zucchini with mushrooms.
Sauteed mushrooms and onions.
Sauteed eggplant with garlic.
Corn
Peas
Roasted veggie mix - zucchini, eggplant, mushrooms, onions, peppers tossed with olive oil, salt, a little balsamic

Veggie salad (tomatoes, cucumbers, carrots, raw peppers, radishes, celery) since he does not eat lettuce
Cucumber salad

In addition to the above, I eat roasted cauliflower, boiled brussel sprouts with butter, asparagus, spinach different ways.

Roasted or grilled veggies, either along or a mix of:
broccoli
cauliflower
asparagus
onions
mushrooms
peppers
brussel sprouts

or sauteed spinach

I don't make any veggies with seeds in them cause DH can't eat them or I would eat zucchini all the time!

We do a large variety.

We do many different kinds of salads, but mainly a normal mixed garden salad, spinach salad, or salad with something over it (like grilled chicken).

We also do lots of kale chips. string beans. roasted eggplant and zucchini. baked sweet potatoes.

and then I try to add vegetables to our main dishes (like ground meat, pastas, soups, etc.): tomatoes and/or tomato sauce, onions, garlic, lima beans, broccoli, carrots, corn... whatever I can throw in there I do!

Roasted cauliflower
String beans sauteed with garlic and olive oil
Potatoes! Mashed, baked, sweet, regular, roasted. I'm Irish. It's a staple.
Spinach sauteed with garlic and olive oil
Carrots, steamed and topped with a little butter
Sauteed mushrooms
Sugar snap peas sauteed in a little neutral oil, add a little bit of peanut butter and a dash or two of soy sauce
Steamed broccoli with fresh lemon squeezed on it
Carrots and parsnips mashed together

We eat seasonally (I took a cooking class that convinced me this was the only way to eat!). We are eating a lot of Brussel sprouts, cabbage, cauliflower, sweet potatoes, turnips, winter squash. Very often I roast a combination of them with coconut oil, shallot, and pink salt and toss in a can of chickpeas at the end. I roast my acorn squash with coconut oil and sprinkle on parm at the end. We do spaghetti squash often tossed with a little maple syrup and shallots or with Indian spices. I have a yummy butternut squash recipe where it's roasted and then drizzled with a mustard and vinegar sauce. I try to serve 2 veggies each night, but make enough for multiple meals.

We do salad probably half the time. My other usuals are steamed broccoli, roasted asparagus, sauteed spinach. I try to toss frozen peas into whatever dishes I can too. We all love the green giant green beans with almonds so I always keep a few boxes of that in the freezer. It doesn't have sauce so healthy but yummy. Some nights we just have baby carrots as a side. I do potatoes, sweet potatoes, and corn but I try to have a true vegetable too.

I saute my veggies a lot as sides and sometimes I roast. Any combo of the following or by itself:

KALE
mushrooms
spinach
butternut squash
zucchini
broccoli
brussel sprouts
asparagus

String beans the same way as above

Stir fry of mushrooms, peppers, onions, snow peas.

mix of peas and corn

corn on the cob

roasted mushrooms, onions or sautéed.

roasted mix veggies of with zucchini, onions, peppers.

We pick one normally and mix it up so the kids have a variety through the week.

Roasted we do: asparagus, carrots, bruessels sprouts, cauliflower, broccoli, beans, or cabbage

Steamed is artichokes, beans, asparagus, cauliflower or broccoli

Pan fried potaties or any other veggie. We do a protine, a starch like potatoes rice or something else and a veggie.

We sautee or roast most things. Steaming bores me!

Spinach (or kale, collards or other greens)
Corn
Broccoli
Cauliflower
Brussells sprouts
Lima beans
Spaghetti Squash
Winter Squashes (butternut, acorn, etc)
Sunchokes
Peas
Turnips
beets
potatoes
Carrots (raw or in stuff)
cabbage-DH actually makes a great warm carrot cabbage slaw

We rarely make salad--it's such a PIA!

It depends on what's for dinner. Sometimes there are a few veggies that make up a curry, or tossed in with a stir fry or rice.

Beans/Lentils


I haven't done too many squashes/root vegetables this winter.
