Skinnytaste recipes

I've made 3 of them and they were delicious. I was thinking of starting a thread where we can post things from the site we've made that were really good.

I've made...

Chicken cordon Blue - a huge hit nothing was left

Garlic Roasted Cauliflower with toasted Asiago Breadcrumbs - also a huge hit

Garlic and Mushroom Chicken in a white wine sauce - very good

Baked chicken parm
Chicken pot pie soup
Chicken rollatini with spinach
Her crockpot recipes are good too

Great idea! I am really loving her recipes (only recently started making them, even though I've read people's posts about ST for so long). They are really creative, which I love, because I like to mix it up with what I eat. Maybe we can also add ones that we didn't like as much, and say why?

Here are some ones I can recall making lately.

I love:

Jalapeno popper stuffed chicken - Very flavorful and not dry at all (sometimes I find baked white meat chicken to be SO dry and tasteless, but not the case here!)

Sicilian Rice Ball Casserole - So satisfying, and I love making casseroles because I can easily portion it out leftovers for lunches, other dinners, etc.

Cheesy Baked Spaghetti Squash with Spinach - Like mac and cheese but with spaghetti squash. A really satisfying vegetarian option.

Tuna Noodle Casserole - Was much more "upscale" and gourmet than I expected with the addition of the sherry and the baby bella mushrooms. I was a fan!

Baked Oatmeal - She has a couple of varieties, I esp. like the one with bananas and blueberries. It's a great breakfast, and easy to make in advance and reheat!

Crockpot Buffalo Chicken Lettuce Wraps - DH and I both loved this (he ate his on little whole wheat sliders instead of in the lettuce wraps)

Cheddar Garlic Biscuits - So easy and no one would suspect they are light.

I liked but didn't LOVE:

Tilapia Fish Tacos - DH thought there was too much liquid, but I enjoyed them

Asian Glazed Chicken Drumsticks - They were tasty, but the sauce was kind of liquidy. It never really thickened to a glaze (but that may have been my user error...not reducing enough, etc.)

Teriyaki Salmon - This was good - and my dh liked it too - but it was similar to other salmon dishes I made. I also wonder if it would be easier to make in the oven instead of on the stovetop.

I didn't really like:

Butternut Squash Soup - Recipe called for everything to be boiled together and then pureed in the immersion blender. But the soup came out really thin and pretty bland... I followed the recipe exactly, but there was a lot of liquid. I like a thicker pureed soup.

There hasn't been one that we haven't loved so far. Here's what I made:

Pasta with Italian Chicken Sausage, Escarole and Beans - I replaced the escarole w/ spinach, because that's what I had on hand.

Shrimp, Peas and Rice - came out like a risotto, sooooo good

Skinny Baked Broccoli Macaroni and Cheese - Loved the crispy edges

Escarole Soup w/ Turkey Meatballs - My absolute FAVORITE. Freezes really well. My daughter loves this too.

Three Cheese Tortellini and Mushroom Soup - very good and SO easy

Bangin Good Shrimp - Would work great as an appetizer, still good

Skinny Scalloped Potato Gratin - CRAZY good

Pork Chops with Mushrooms and Shallots

Skinnytaste recipes

So far i've made:
Chicken rollatini (very good and easy)
Cheddar Biscuits (once again- very good and easy)
Stuffed pepper soup- I like it a lot, DH not so much
Sicilian rice ball casserole- made this awhile ago..it was goodbut took a little while to make.

I've made the baked pasta with Italian sausage & spinach and the chicken cordon blue. Both yum. I've made the pasta one a few times.

I have made quite a few!

Sweet Potato Turkey Shepherds Pie-DH, DD and I all loved this. It was a little time consuming to make, but the portions were VERY filling (6 servings).

Crock Pot Italian Meatballs-DH, DD and I all loved this. Easy! I double it so I have leftovers for a day or so. Very tasty.

Turkey Meatloaf-DH, DD and I all like this. I have never had a Turkey Loaf that has totally wowed me...but this is good and I've made it a few times.

Asian Turkey Meatballs w/Sesame Lime Dipping Sauce-LOVE LOVE LOVE. One of my favorites!

Escarole Soup w/Turkey Meatballs-Very easy and good. I usually whip up a pot on the weekend to give us some extra lunches during the week.

Greek Turkey Meatballs (w/Skinny Tzatziki)-Very good! One of our favorites!

Asian Glazed Drumsticks-I have to admit I wasn't too impressed. The flavor was good...but the sauce was watery which killed it for me because the flavor didn't really "stick". I may try it again.

Baked Chicken with Dijon and Lime-This is one of our all time favorites! It's a skinny version of a Paula Deen recipe!! Very good!

Balsamic Chicken with Roasted Vegetables-Good. A friend recommended this to me and she went on and on...I didn't love it as much as her, I think the chicken needed to marinate a little in the balsamic, but it was good and I will try it again...the veggies were great!

Chicken Rollatini w/Spinach-Very good and easy! I love that all the cheese didn't ooze out! Make this often!

Chicken Shiitake and Wild Rice (soup)-This is DH's FAVORITE soup now! It is very very very good and EASY!!

Pasta with Italian Chicken Sausage, Peppers and Escarole-Very good!! Another one of DH's favorites! Makes a nice amount of leftovers!!

Pasta Fagioli (Pasta and Beans)-Tasty!

I feel like I've tried more....if I think of them, I'll add.

Ive made a ton. I can't remember all of them, especially the ones I didn't love (but there weren't many)

Some of our favorites:
Chicken Cavatelli soup--so easy
Chicken Tortilla soup
Bolognese
Chicken Cacciatore
Whole wheat pancakes--we add a few chocolate chips (They are very low in sugar and I literally count out my chocolate chips since Im watching calories and with the sweetness from 16, I don't even use syrup)
Skinny Chicken Nuggets
Butternut squash pasta with spinach and chicken sausage
Avocado egg salad
Chicken Milanese---I LOVE this one!
Roasted Broccoli with smashed garlic
Some quesadilla with mango salsa but I don't remember the exact name.
