Campfire food
DH and I are planning a camping trip - just one night, nothing crazy. What are some good foods to bring? I'm figuring (veggie) franks and beans for dinner, I know s'mores are traditional, too. Any other ideas?
TIA

Re: Campfire food
I don't eat eggs.
I forgot to mention, we are various levels of veggie/vegan.

Re: Campfire food
baked potatoes on the campfire are delish! Wrap them in tin foil and put them on the fire.. Also, corn.
You can totally make veggie burgers and stuff-- just make sure you bring a pan to cook them in.
YOu can also make tortilla pizzas-- using a tortilla, tomato sauce and soy cheese-- cook this in the pan as well.
I am guessing you are bringing vegan marshmellows!

Re: Campfire food
Popcorn. It's kinda cool popping corn over an open fire. You can either get the JiffyPop stuff, or go all-out and get loose popping corn, and use a pot with a bit of oil.
Pancakes work well over a campfire. Have a grate to hold the griddle, and just pour the mix as you would at home. Just keep a very close eye on them, since it's hard to adjust the temp.
Cast iron stew pot, and make a campfire stew. Potatoes, carrots, celery, etc.
