Anyone have a tortellini salad recipe?
Having barbecue on Sat and stop and shop doesn't make their deli tortellini salad anymore. I'm craving a cold tortellini salad.

Anyone have a tortellini salad recipe?
Dressing:
Equal parts olive oil and red wine vinegar (about 1 cup each)
Dried basil, onion powder, salt and pepper (I eyeball it when I season it)
One bag cheese tortellini
One block mozzarella cheese
Pepperoni slices, chopped
Red pepper, chopped
Green pepper, chopped
Cook tortellini according to instructions, drain and run under cold water. Combine with the peppers, cheese and pepperoni in a large bowl. Pour dressing over everything and mix. I make the dressing from memory, so sometimes I have to make another batch of dressing because it's not enough.

Oh I got one!!!
Steam the following: broccoli (cut up small), chopped carrots and chopped red peppers. Gotta do it separately cuz broccoli takes longer than the other two
Dump into a bowl with the cooked tortellini
Let it cool in fridge
Before you serve it add:
some chopped red onion
Olive oil (my mom adds a little lemon too)
Parmesan cheese
Salt pepper

I would make it like my regular pasta salad
Red onion
Roasted pepper
Green & black olives
Gardinera salad chopped - add some juice. Taste as you go
Olive oil
S&P
lil oregano
I sometimes add meats & cheese - ham, salami, mozzarella
But usually leave it w just veggies

I pretty much do this but I just buy Italian dressing.

i found this one for the easter brunch i just hosted.
sssssoooooooo easy
cheese tortellini
grape tomatoes (halved)
sliced black olives
thinly sliced basil
pesto
ta dah!
it was a bit hit... even the picky eaters wanted seconds.
