I think 2 sets of the monthly onesie stickers are a great idea. There are tons on etsy.
Also my friend got me 2 baby briefcases (on amazon) for storing all their paperwork. I love them! Use them all the time and I'm ordering another one for this next baby I'm having.

a coupon that says "I promise to stay over at least 2 nights, not necessarily in a row, and help all night."
I can't think of anything that was really essential except the obvious things that are most likely on her registry. A photo session is a great idea. gift cards for restaurants that deliver in their area? Having prepared food, needing sleep, and a cleaned bathroom/kitchen were the things we needed help with at first.
