Help me use my leftovers

Had a party and have a TON of stuff leftover. Also, I'm on weight watchers so trying not to eat unhealthy.

Anyone have creative ways to repurpose any of the following:

- grilled chicken breasts
- meatballs in sauce
- ziti (sauce was already frozen so don't want to refreeze)
-slow roasted tomatoes

Italian Meats and Cheeses

Uncooked veggies
-zucchini
-carrots
-broccoli

and I have a lot of Apples - dang BJ's and your supersize everything!!

I would use the chicken and veggies and add a can of cream of mushroom or celery and some potatoes and make chicken pot pies

The ziti and meatballs makes a nice meal

you can make stromboli with the cold cuts

You can do tons with the grilled chicken. Throw it in salads, wraps, quesadillas, or on pizza. The roasted tomatoes would be great in all of these and you could even saute the zucchini to throw in as well.

I would probably freeze the meatballs and sauce. Maybe keep some out to eat with the ziti.

I'd saute the zucchini with some onion, garlic and thinly shaved carrot in a little olive oil. Add Salt and pepper and throw in the slow roasted tomatoes. If you need more 'sauce' add a can of tomato sauce or puree. Add some fresh basil and serve over your ziti.. then keep some of the sauce.

Next day get some pizza dough from the pizzeria OR pick up some light English muffins. toast the muffins or throw the pizza in the oven to get it set. Spread some of your veggie sauce over it. Top with grated reduced fat mozzarella. Top with sliced meatballs.

Make grilled paninis with the cold cuts and / or grilled chicken. Get some fig jam and spread it on a sandwich thin.. top it with italian ham and some mozzarella and some basil.

Make quesadillas with the grilled chicken

Make grilled chicken salad

On top of what the other ladies mentioned, maybe a veggie lasagna?

Or veggie stromboli.

Apple pie, apple pancakes, apples & waffles, stuffed apples......
