I guess for supper I'll do:

Chicken Asada Quesadilla
Manchego, Spinach & Mushroom Quesadilla
Chorizo Quesadilla

and MAYBE
Tamales and/or Shrimp Cerviche
Or I might skip the quesadillas and do some beef and pork to make tacos/burritos with fixings - guac, cilantro, beans, green rice, tomato, onion, etc..

For dessert.. I think I'm definitely gonna go with the frozen Mexican Hot Chocolate.

Yeah.. RIGHT. I was thinking quesadilla because they are so friggin' EASY. The more I think about it, the more I'm thinking I don't want to be bothered cooking since it's my day. I might just make margaritas and call it a night!Chat Icon Chat Icon

I am going to do like a crockpot barbacoa/shredded beef filling for burritos, black beans and rice. Going to get it started now!

were are celebrating Seis de Mayo tomorrow...

Ground chicken tacos with all the fixings incuding lettuce, cheese, chipotle ranch sauce, tomatoes, sour cream, taco sauce.

chili lime chicken and black bean quesadillas

Our friends are bring dessert... but i might make nutella quesadillas for dessert if we need more!

my intention is to make chicken and chorizo fajitas with mashed black beans, rice, avocado salad...however I may not get out of work early enough so we may be ordering in.

May's edition of Bon Appetit has an awesome menu/recipes for pork tacos with the fixings that I'd like to try this weekend!

oh, and I just had enchiladas suizas for lunch! Chat Icon
