Anyone cooking something fun for Cinco de Mayo?
Looking for an excuse to make some totally fattening Mexican food
(It's just 4 of us eating!)
I know I want to make guacamole & pico de gallo...
Any ideas for a main dish?
I'm thinking maybe make your own quesadillas or Mexican lasagna or some loaded nachos (chorizo, beans, cheese...)
What about desserts? I can't think of anything fun!

I am hosting a dinner party at my house for my birthday on Ocho de Mayo and I am keeping the theme.
I am planning to do
ceviche guacamole pico de gallo black beans rice fried yucca with mojo (maybe)
and then a fajita bar shrimp with garlic fried chorizo grilled chicken grilled flank steak sauteed peppers, onions, mushrooms, chick peas
blood orange margaritas and sangria
dessert is being brought by guests...birthday cake hopefully!!!!

churros dipped in melted mexican chocolate
sopapillas with iced cream
food network and epicurious also have a ton.
you could do "quesdillas" for dessert with bananas and mexican chocolate.

Not fattening, but I can't stand refried beans from a can.
I take black beans, chicken stock, cumin and chili powder - warm the beans then smush. Add stock to get correct texture.
Just realized I have DS that night - maybe I will make a fiesta!!

chorizo is delicious. it is a highly flavored sausage. but really, you are in SAN DIEGO. get thee to a market and buy some!! Goya makes an inexpensive one that you could try, though it's far from the best. I LOVE the D'Artagnan brand.
or, even better, you guys could go for tapas instead of sushi on Friday and have some chorizo with manchego
I hate flan, but I am sure that would be a suitable substitute
what about a mexican spiced chocolate fondue?

We always do a Cinco de Mayo themed dinner. Usually guacamole, chicken enchiladas, steak fajitas and sangria!!
Ophelia, please tell me how you make the fried Yucca!!! please! Where do you get it?? I think I wanna finally try the chorizo also. Where would get that?

we had a mexican girls night and someone made a really easy dessert... she filled flour tortillas with apple pie filling and rolled them up. She poured carmel sauce on top and baked it until warm.
Not really "authentic" but for the flour torillas but yummy none the less...
OR....if you want to impress and have the time....my all time favorite....rice pudding

It's DH's birthday and he's not into Mexican food, unless you count Corona.
Thinking, thinking.... If I feel adventurous, I might try a seafood paella, or if not, grilled marinated skirt steak with yellow rice. Definitely Crumbs for dessert !

That was the one I used!!! It came out really good! The only thing I would advise is to maybe cut back on the amount of liquid that you soak it in. I felt like there was definitely a little extra, but, that being said, it still came out delicious and everyone liked it. I said that I wanted to call it more of a tres leches custard or something because of the liquidy-ness, but like I said, people loved it...
I'll try to remember to bring the recipe with me tomorrow to work and post it!
Actually, I just found the link. Here you go! (I just made regular whipped cream, not mango...)

I guess for supper I'll do:
Chicken Asada Quesadilla Manchego, Spinach & Mushroom Quesadilla Chorizo Quesadilla
and MAYBE Tamales and/or Shrimp Cerviche Or I might skip the quesadillas and do some beef and pork to make tacos/burritos with fixings - guac, cilantro, beans, green rice, tomato, onion, etc..
For dessert.. I think I'm definitely gonna go with the frozen Mexican Hot Chocolate.
