Favorite Mexican Recipe ?

Feeling some mexican food.


Looking for a good, quick recipe.

A recipe that my 1 year old would be interested in would be a bonus

Turkey Enchiladas

1 small onion, chopped
2 garlic cloves, chopped
1 packet low sodium taco seasoning
1 lb. ground turkey
10 whole wheat tortillas (med size)
1 jar enchilada sauce
Mexican cheese blend

Sautee garlic and onions till golden. Add turkey meat. Add taco mix according to directions. Set aside.

Coat the bottome of a 13x9 baking dish with enchilada sauce. Spoon 2 tbsp of meat mixture in the center of a tortilla and spinkle w/cheese. Roll up and lay seam side down in the baking dish. Repeat.

Pour remaining enchilada sauce over tortillas. Top w/generous amount of cheese. Take a sharp knife and cut the enchiladas horizontally (makes for easy lifting and makes them a manageable size). Bake until cheese is melted, around 12 minutes at 375 or so.
