Re: Crock Pot Recipes

you can get the "Fix it and Forget It" crockpot book... lots of great recipes in there!

I use mine a lot... some of my favorites are

Chicken Cacciatore. basically just a couple chicken breasts, a can of crushed tomatoes, an onion and pepper in there with whatever seasonings you feel like ( basil, oregano, parsley). let it cook all day. the chicken will shread so it becomes more like a stew you can serve with pasta or rice

Theres also a chicken chili recipe I have, too. i posted it on here a couple times so it might show up if you do a search. but basicall its chicken breast, a chili seasoning packet, those diced tomatoes with green chilies that come in a can, a can of tomato sauce... just add that all in and cook all day. then, about 15 minutes before you want to eat you add in a can of hominy ( puffed corn) and let that cook through. SO good, and freezes well, too!

i also like pot roast- just a 3 pound roast, put in an onion, some potatoes, some baby carrots- a little bit of red wine, little bit of beef broth and whatever other spices you think you want--- comes out AWESOME! this also saves well, and we usually end up getting 2 meals out of it

This is my easiest crock pot recipe

boil sausage links (poke fork holes in them first) for 20 minutes. Then slice them up and put them in the crock put. Slice up 2 peppers, any color and add to the crockpot. Then add enough pasta sauce to cover the sausage and peppers. Cook on low for 8 - 10 hours. When you come home just boil some pasta and serve the sausage and sauce over it.

Re: Crock Pot Recipes

I made a really yummy Rosemary Garlic Pot Roast in my crockpot last week. It's really simple and DH loved it. We had it with a side of cranberry sauce and mixed veggies. You could also throw veggies in the slow cooker to make it a more balanced meal. My recipe:

Rosemary Garlic Pot Roast

Ingredients:
3 pounds eye of round steak or chuck roast
1 tsp black pepper
1 tsp salt
2 cups flour
3 cups of beef broth
5 sprigs of fresh rosemary
5 sprigs of fresh thyme
5 cloves of garlic

Directions:
1. Mix flour, black pepper and salt in a bowl.
2. Coat the meat in the flour mixture.
3. Brown all sides of the meat on the stove (about 3 minutes on each side at medium heat). Use a little olive oil to coat the pan if necessary.
4. Place the roast in the slow cooker.
5. Add enough beef broth to cover half the roast.
6. Add 5 whole sprigs of rosemary and 5 whole cloves of garlic to the slow cooker.
7. Strip thyme leaves and sprinkle in the pot.
8. Cook the roast on low for 8 to 10 hours or high 4 to 5 hours.

Personally, I put the slow cooker on high for the first hour and left it on low for another 7 hours. Also, the juices that form in the crockpot can be used to make gravy!
