Squash

so today dh brought home 4 different squash that someone at work gave him, they come from the guy's father's farm

i have never cooked or even eaten squash
what do i do with them.
one is a yellow squash
i believe one is a zuchini
one is very large and green
and another green

I love squash! you can saute it in a little olive oil and eat with grated cheese; make a frittata by doing the above, but beat some eggs, and toss them in the pan once the squash is cooked, then cook it a few minutes until the eggs are cooked through on the bottom, toss in the broiler for a two minutes or so until cooked on top....a quick and easy dinner!

Yay! Summer squash!

The simplest prep is to cut them up into little chunks and saute in butter and/or olive oil with a little garlic, salt and pepper until tender. From that point you can eat them straight or you can toss the whole thing with some pasta and add grated cheese. You can also dump the sauteed cubes into a tomato sauce to liven up your red sauce.

You can cut into chunks add some onion and some other veggie of choice, coat with a little olive oil, season with salt and pepper and roast or bake it.

You can also grate it and make zucchini bread.. which I loooove (it's sweet - like a pumpkin bread). Or zucchini pancakes which are another favorite in our house when served with a scallion yogurt sauce or a little sour cream.

My brother is a huge fan of slicing them thin, breading them and frying them. I think it kills the flavor too much - but his family loves it!
