Re: What is the trick with avocado?
If you add lemon to the guacamole it wont turn brown. I add half of a lemon and 1/2 of a lime to mine

Buy them when they are a little soft to the touch or when you can flick the little stem nub (don't know what else to call it) flicks off easily.
My big trick...leave a few of the pits in the guac....works like magic

Yes, somewhat soft to the touch and keep the pit in the bowl of guac to keep it from turning brown. Yum! Love guacamole!

Yes to lemon and lime and leaving the pit in the bowl also helps as a pusher for your chips!
Also when storing it if there's any left keep it in a container that it fits in tight. No space at the top.

Re: What is the trick with avocado?
For picking out avocados, I press where the stem is. If that presses in nicely and it is soft, but not too soft, it is perfect.
If you get one that is hard, put in a plastic bag with air and let it sit out on your counter for a day or two.
I add lime to my guac and press the plastic wrap down on it. I have yet for a guac to turn brown.

Re: What is the trick with avocado?
I usually pick avocados that push in slightly when pressed. If I can only get unripe avocados, I put them in a brown paper bag overnight with some bananas and apples. There's something about chemicals released from bananas and apples that speed up the ripening process of avocados.

Re: What is the trick with avocado?
I add lime but if you don't have lime...you can use a splash of orange juice. A trick used at the restaurant I worked at
