Chicken leg recipes???
I defrosted them for tonight and don't know what to do with them! HELP and thanks!

You can do just about ANYTHING with legs! They are sooo flexible and (because I am a dark meat fan), tastier than breasts.
Make a leg only cacciatore Marinate them with garlic, soy, fish sauce, ginger and red pepper and toss them on the grill. Bake them with lemon, garlic and butter and a little rosemary.
ETA: I usually do skinless legs. When I do not take the skin off I do a quick browning on the stovetop to get it crisper.
When I marinate legs I pierce the skin or slash the flesh before soaking. I try to take care not to pierce the flesh UNLESS I am marinating.

Take a handful of good tortilla chips, add a little chili powder, cumin, and salt and stick them in your mini prep until they're in coarse pieces... then put them in a shallow dish. In another dish, put 1 egg (whisked) and some more chili powder.
Season chicken with salt and then dip in egg, then coat with crumbs (you kind of need to press them on so they stay) - then transfer to baking sheet that is brushed with a little oil. Bake at 450 for 40 or so minutes (don't turn them) - and they're delicious!
I make those with roasted potatoes - you can cook them together. Take a potato and cut it into 8 wedges. While you're preheating the oven, put a baking sheet in their so it gets nice and hot. Then stir cumin, oregano, salt and olive oil in a bowl... then add potatoes and toss until they're coated.
Then you just arrange them cut side down in one layer onto the hot baking sheet and roast for 40 minutes, turning 1x halfway through. They're perfect because the chicken and potatoes both take about 40 minutes so everything can be ready at the same time.
Dh's other favorite which is SO simple is to just take the drumsticks... season with salt, pepper, and chili powder and bake at 450 for 30 minutes. Then take any good BBQ and brush them with that. Continue cooking for 5 minutes, then brush them again, turn, and brush the other side... bake 5 more minutes and that's it! They are SO yummy! We usually service that with yellow rice.

You use the heck out of your mini-prep too.. no wonder I love you!
That recipe sounds fantastic. I can't wait to try it!

Apricot Chicken
6 skinless, boneless chicken breasts (i use drumsticks) 1 cup apricot preserves 1 tablespoon distilled white vinegar 1 tablespoon brown sugar
Reviews also say to add minced garlic, black pepper and a little bit of dijon mustard.
Preheat oven to 350 degrees F (175 degrees C). Place the chicken breasts in a 9x13 inch baking dish. Combine the apricot preserves, vinegar and brown sugar. Pour the preserve mixture over the chicken, cover and bake for 50 minutes. Remove cover and bake for 10 more minutes.
