I made the BEST grab-and-go breakfast!
I was futzing around last night and came up w/this.
2 cans reduced fat Pillsbursy crescent rolls
4 eggs
1/4 cup milk
Salt and pepper
1lb Bob Evans bulk breakfast sausage
1 onion, chopped
Cheddar/jack cheese
Preheat oven to 400
1. Brown sausage and onions in a skillet until nicely browned
2. Line a cupcake tin w/1 triangle of crescent dough each (I smushed them a little and then flattened into the wells)
3. Add a tablespoon of sausage/onion mixture.
4. Whisk eggs, milk, salt and pepper in a measuring cup (or something similar, make sure it has a spout for easy pouring).
5. Pour egg mixture over sausage, just enough to cover.
6. Sprinkle a little cheese on top.
Bake until golden and puffy.
DH was ADDICTED to these when I made them! They are delicious and they reheat perfectly. I think I am going to be making these in crazy big batches. It's also a simple enough recipe that you can totally customize it (veggies, bacon, ham, turkey sausage, etc).

Thank you Heather! I made these on Sunday Morning. I tweaked it a bit (I put together a batch of apple maple chicken sausage and used that instead of Bob evans) - but it was great! My husband actually put some aside for himself - and he doesn't usually eat leftovers so that's kind of a big deal! I think I will try with bacon and biscuits next time!!
