They should -- the bank should look at ALL of your assets (as well as debt, income, credit).

we have 3 savings account and a checking
they only wanted the 2 accounts that had the money showing our down payment and some extra.
they didnt even care about where out checks were deposited to and never asked for those statements

The bank will ask you for the bank accounts which are paying the down payment and all closing costs.

So if you have multiple bank accounts you may not need to show them all. If the downpayment and closing costs are expected to be $100k you need to show where that $100k is coming from. If you have a joint account with a parent that's not going to be used for the house, then you don't need to show that.
