When you're in a parking lot cruising for a space...
..and you come up BEHIND another driver who has their LEFT blinker on to pull into a spot. (Said spot is open) Do you blow past this driver on the left hand side? Or do you wait until they pull into the spot?

I wait until they turn into the spot. Just common courtesy- my life can be put on hold for a few extra seconds to let someone park.

I never cruise looking for a spot! I always park far away
But in the case you described, I would wait. I am sure the person making the left into the spot isn't expecting a car to come up on the left!

I get out, grab two shopping carts and ram one into the car pulling out and one into the car pulling in...
then I swerve around them

most of the time i'd wait.. but it depends on the width of the aisle and if there is a car in the spot waiting to come out or not.
Sometimes you can see that the car in the parking spot is still packing up so you know they won't be reversing while you go by, and the car waiting won't be turning either

Usually I'd wait, but let's say the people are taking forever still packing up their car and there are cars lining up behind me waiting to go too, I would SLOWLY, carefully go around them - definitely wouldn't "blow past" anyone in a parking lot. You just never know.

if the car hasnt pulled out of the spot- yes i go around because some cars take forever putting on seatbelts, adjusting lights.
