Mine would have to be meatloaf. For a quick and easy meatloaf I take a pound of 93% lean beef, breadcrumbs, a couple eggs, grated pecorino, squirt some ketchup and worchiser sauce. Mix it all up put it on a baking sheet. I bake it @ 375 for an hour. About 25 minutes in I add canned white potatoes. 45 minutes in I add peas. Voila. Done. SO easy
Also tacos are super easy & a quick go to.
Grilled chicken with some lemon, brown rice and veggie.

I do couscous with chicken.
Sautee garlic and onions, throw in some cumin, oregno, red chilli flakes. Throw in a can of crushed tomato, a pinch of sugar and nutmeg. Add the chicken, let the tomato and onion mixture coat the chicken well and let it cook for a few mins. Add chicken stock.. add spices to taste and let chicken cook and sauce thicken a little. When done, squeeze some lemon juice on top, and throw in some parsely.. which is totally optional.
Top it on couscous.
Takes about 20 to 30 mins.
I also stir fry.. mixed veggies, whatever protien I have on hand, onions, garlic... toss in with some soy, some teriyaki and drop of ketchiup (instead of salt and gives it a nice aroma as well). Let everything mix well, and cook thoroughly. Serve with brown rice.

Tortellini Soup with Spinach
Boil a pot of water and add some chicken or vegetable base until desired broth taste. Cut up carrots and onions and boil until soft, then I throw in a bag of tortellini and a couple of handfuls of fresh spinach and parsely

Angle hair spaghetti with spinach and tomatoes.
Sautee garlic with a little oil, add tomatoes until tender. I add hot pepper, some oregano pinch salt, Nd fresh grated Locetteli cheese. Then add 1/2 can chick broth. add spinach last, since it only takes a few mins.
Add spaghetti ( obviously cooked) and if needed add the othernhalf can chicken broth. It shouldnt really be to brothy.

1 can kidney beans 1 small can tomato sauce salt to taste pepper to taste My great grandmothers were italian and didn't measure anything, so with the rest of the seasonings it's just more basil than oregano and more onion powder than garlic powder.
Combine and cook in small pot for about 30 minutes, pour over pasta.

my go to meal is warm spinach salad
brown mushrooms and red onions in a pan. warm shrimp on a grill (forman works) (shrimp is optional...you can use grilled chicken or without meat)
in a bowl put spinach leafs, goat cheese, bacon bits and top with the warm stuff (it melts the goat cheese). then i put light raspberry walnut vinegarette on top.
omg i can eat this everyday!

put 3 lbs frozen chicken tenders in the crockpot cover with 1 bottle of bbq sauce cook 5 to 6 hours on low

oh me too!! I tried once and could barely get one bite down.
I add some garlic powder, kosher salt, fresh cracked black pepper, and some oregano to the pan of oil & garlic before I turn on the heat. I cook the garlic in the oil on low so that the garlic flavor comes out slowly into the oil and won't burn--once the garlic is burnt, forget it. After it cooks for a bit, I add in some pasta water (after I drain the pasta) or some chicken broth.
I add lots of locatelli pecorino romano cheese after I mix the oil in with the pasta...like a lottt lol. I LOVE it

Rigatoni with Ricotta
Boil Water Cook rigatoni in water Drain reserving some of the pasta water Mix ricotta with the water until your desired consistancy. My mom likes it "soupy." I prefer it thicker. Season with salt and cracked black pepper.
Sometimes I fry up some chicken cutlets while I'm waiting for the pasta to cook. Sometimes I just serve with a salad. Sometimes I toss in some steamed brocolli.

Same here, simple and delicious. I just put a ton of garlic (sliced thin) in EVOO in a pan on VERY low heat until the garlic is mushy. I actually then smash it with my fork so it basically disappears into the oil. I LOVE garlic but hate chunks of it. Whatever you do, don't burn the garlic. Totally ruins it.
My other simple go to is macaroni (usually shells) and chickpeas. Sprinkle with salt, pepper, garlic powder and lots of grated cheese.
