congrats!!
most doctors do 2 or 3 betas as long as the numbers are doubling normally. sono is usually around 6w (so about 2w from first beta), but some doctors do it earlier. but be aware that the best chance to see the heartbeat is 6w or later, before 6w what you see will be iffy. this early one day can make a big difference.

Congrats!!! Excellent numbers!
As far as how many, I think it varies. In my case, I went in for 2 and then an U/S and another beta the same day, about a week later.
