Any ideas for a weeknight, casual date? Restaurant? Central/eastern suffolk if possible?

If you are near Oakdale you must try Mannino's on Montauk Highway. (Italian) Very nice atmosphere- small , cozy bar to sit at and have a drink while waiting for a table. Much less crowded during the week. Awesome food.
Or a few doors down is Viva La Vida for GREAT spanish/mexican food.
Both are HUGE thumbs up!
ETA- Jeans/Casual are fine for both- but they have an upscale air...

For a romantic & adorable italian restaurant try Pasta Pasta on main street in Port Jeff.
Carnival is good but more of a family place IMO.

I like Cafe Joelle in Sayville. It's right on Main and has fantastic food and an intimate atmosphere. You can do a little strolling around Main Street before or after dinner - the town is still dressed up for the holidays and looking good. You can walk across the street and east a bit to grab a bottle of Wine from Down the Rabbit Hole - and stop at the Chocolatier for a few truffles for after dinner.
La Tavola down the street a bit from Cafe Joelle has great Italian Cuisine and a killer Prix Fixe menu.
If you'd prefer something even a little more casual than that.. Crickets on Main in Sayville has really good food (Their Reuben is awesome). It's more of a neighborhood tavern feel than a restaurant - but good food.
