Weekly Menu Thread- 6/12
Figured I'd start it off- I've grown to like this thread! Everyone's menus give me ideas!
Sat: BBQ
Sun: grilled chicken, spaghetti, peppers and onions with red sauce
Mon: Taco casserole
Tues: Hungry Girl Jambalaya
Wed: hot dogs and knishes
Thurs: pasta and chicken sausage
Fri: chicken fajitas with brown rice

I miss participating in these threads! Once we get back to San Diego I"ll be right on top of this again!
My big issue is that Tuesdays and Thursday I leave my house at 6:30 am and don't get home until 8ish pm, so I end up ordering dinner at work those nights. And we're living with my parents and they order in A LOT.
So this week these are the only things I know I'm cooking:
Monday - rojerono's tuscan chicken, wild rice blend & salad
Wednesday - tilapia piccata, couscous & burnt broccoli

Thursday - sushi

OK, I need to get back into this thread. I've been slacking for the last 3.5 months with being pregnant and sick but enough is enough already!!
Sunday - Breakfast for dinner - egg casserole
Monday - Taco Salad
Tuesday - Goddess Chicken with brown rice
Wednesday - Veggie Lasagna
Thursday - unsure
Friday - leaving for PA!!!

I don't have the exact recipe in front of me but I think I'm roughly ok here . .
Chicken breasts lined along casserole pan - (4-6)
1 can artichoke hearts (I use the marinated ones for extra flavor but drain).
sundried tomatoes - I just choose how much I want in there, I love sundried tomatoes. Slice them thin.
3/4 Annie's Goddess salad dressing
1/2 cup chicken broth
put the artichokes & sundried tomatoes over chicken. In separate bowl, mix dressing and broth. Then just coat the chicken and toss, so everything is even.
Bake 350 for about 25 minutes
SO EASY and I serve with rice. (I got it from the six o'clock scramble book)

Sun: roasted balsamic marinated chicken and marinated grilled sirloin steaks, homemade potato salad, arugula and tomatoes with a balsamic vinaigrette
Mon: grilled chicken over arugula and goat cheese salad, warned ciabatta
Tues: sausage and zucchini over farfalle
Wed: chicken tacos, black beans, salad, guacamole
Thurs: dinner at Becco for me, dinner with strippers for Dh (it's our friends bachelor and bachelorette parties!)

Sure.. but I'll be honest it's no gourmet hoopla!
I use thick center cut cod filets and squeeze a little lemon over them. Then I sprinkle some kosher salt and a little freshly ground pepper. I put some olive oil in a pan and get it really hot. Then I put the cod in - seasoned side down. I cook it about a minute and then I add grape tomatoes that have been tossed in a little olive oil (just enough to coat the tomatoes) and kosher salt. let that sti on the stove for anotehr minute or 2 and then throw the whole shebang into the oven at 375 for maybe 5 minutes or until cooked through. When you serve it flip the bottom up because it will be nice and caramel brown. The tomatoes will have burst and you can arrange them over the filets.
I usually buy red quinoa - but you can use any kind. First I soak it in warm water with a bit of salt for maybe 10 minutes. Then I rinse it 2x. I heat up a little olive oil in the bottom of my deep pan and add some diced shallots or onions and a minced garlic clove. Add chicken stock and about a teaspoon of chicken base to pot and bring to a boil. Add quinoa and bring back up to a boil. Stir, reduce heat, cover and let it simmer for about 15 minutes. You can follow the package for ratio of quinoa to liquid, but I believe it's 1.5 liquid for every cup of quinoa. When the quinoa is cooked, remove top and add salt & pepper to taste. I will often squeeze in half a lemon or lime to give a little extra zip but that's up to your own palate!

Thanks - DS has taken a liking to fish and I have quinoa at home but not sure how to make it taste good. I've only put it in chili.
