Weekly Menu 4/25
Figure I'll start it since we just did the food shopping
Sat: BBQ Rib Eye Steak, Baked Potato, Creamed Spinach
Sun: Leftover Italian food from Fri...Margarita Pizza, Spaghetti w/meatsauce & Eggplant Rollatini
Mon: Chicken Kiev/Cordon Bleu, Red mashed potato, & mixed steamed veggies
Tues: Meatloaf, mashed sweet potato, & corn
Wed: Taco night with all the fixins', homemade guac, black beans, & yellow rice
Thurs: Chicken Cutlets, Rice pilaf, & Green bean casserole
Friday: Salad with chicken (made with the leftover cutlets)

Sun - Greek Style Tilapia in whole wheat flat breads. Roasted Asparagas and tomatoes. Greek salad.
Mon - Beef stroganoff and egg noogles. Peas. Salad for DH (he loves salad)
Tues - BBQ meatballs, mashed potatoes, and broccoli? something green
Wed - Pasta with roasted red peppers, eggplant, other veggies and fresh mozz
Thurs - leftovers or something easy like grilled chicken
Fri - out for italian with DH family
Sat - out with friends, will probably eat with them

Monday -DH will have leftovers / I have a yoga class
Tuesday - DH is going out with the guys - I will probably have Subway or soup
Wednesday -Chicken Cordon Bleu - Hungry Girl recipe with broccoli
Thursday - Turkey Chili with tortilla chips/salad
Friday - take out

It is soooo easy and delish!
Chicken (any kind you want, thighs, boneless, skinless, whatever) 1/4 cup vegetable oil 1/2 cup ketchup 1/2 cup chutney 2 teaspoons minced garlic 1 teaspoon salt 1 teaspoon coarse ground black pepper 2 teaspoons hot pepper sauce 1/2 lemon, juiced
Place chicken pieces in a shallow casserole dish.
Mix together oil, ketchup, chutney, garlic, salt, black pepper, pepper sauce, and lemon juice. Pour over chicken pieces.
Bake at 400 until cooked through; cook time will vary depending on type of chicken used.

Sat: out Sunday: out (bday dinner at godson's house...roasted pork tenderloin, risotto, sauteed spinach)
Monday: shrimp with garlic and white wine over linguine, sauteed swiss chard
Tuesday: sweet italian sausage stir fried with onions, peppers, baby bella mushrooms and zucchini with semolina bread
Wed: baked chicken, rice, pink beans, avocado salad
Thurs: roasted cod with garlic and lemons, couscous, spinach
Fri: either sliced pork stir fry with zucchini, carrots, onions over rice OR take out!

mon - tofu noodles and red pepper pesto tues - plantains with cheese and quinoa with tomatillo cilantro sauce wed - salt and pepper tofu thurs - tempeh sandwiches with yogurt tahini sauce and oven "fried" green tomatos on the side
fri, sat, and sun i'm out of town so dh is fending for himself!

After being on vacation and etc. for the last few weeks I am back to menu planning...
Mon: Chicken orzo soup w/spinach, toasted baguette
Tues: Tilapia w/ cherry tomatoes and capers, rice pilaf, arugula salad
Wed: roasted vegetable pasta
Thurs: roasted lemon chicken pieces, fingerling potatoes, stuffed artichokes
Friday: Shrimp scampi over whole wheat linguine, arugula salad

Sorry I just saw this: I made it last night - it was REALLY good - make sure you use THIN culets. The ones I had were alittle thinker and it took longer to cook...The recipe is for 1 serving. Ingredients: One 5-oz. raw boneless skinless lean chicken breast cutlet 1 wedge The Laughing Cow Light Original Swiss cheese, room temperature 1 oz. (about 3 slices) 97 - 98% fat-free ham slices salt and black pepper, to taste
Directions: Preheat oven to 350 degrees.
Put chicken in a large sealable plastic bag, squeeze out as much air as you can, and seal. Using a meat tenderizer or a can, carefully pound chicken through the bag until it is about 1/4-inch thick. Remove chicken from the bag, and season to taste with salt and pepper on both sides.
Lay the chicken flat and spread the cheese wedge over it. Evenly layer the ham slices on top of the cheese. Starting with one of the longer sides (or any side, if it's square), tightly roll up the chicken breast cutlet, and secure with toothpicks.
Place chicken roll in a baking dish lined with foil and/or sprayed with nonstick spray, and then cover the baking dish with foil.
Bake in the oven for 20 minutes. Carefully remove the foil covering the dish. Continue to bake (uncovered) for an additional 15 minutes, or until chicken is cooked through. Enjoy!
