Weekly Menu 11/7
Let's see those menus!
Tonight - Rotisserie chicken with burnt broccoli
Sun - Fish tacos with radishes, salsa verde, & black beans
Mon - Rotisserie chicken with yellow rice
Tues - Veggie & cheese panini with salad
Wed - Breakfast for dinner: Coast Toast
Thurs - Lasagna-style baked ziti
Fri - Chef's night off!

It's tentative...but I like Breakfast for dinner.
Sun: Leftover lasagna with soup
Mon: Burger night
Tues: DH is on his own-I have PT conf.
Wed: Salad Night-Greek salad with soup (every once in a while, we make a HUGE salad for dinner. Maybe I'll add grilled chicken for DH)
Thurs: Pasta Puttanesca
Fri: Homemade pizza
Sat: Take out!!!

Sun-on our own, DH at Giants game
M-ravioli bake (ravioli, sauce, cheese, spinach and I add in already breaded chicken from trader joe's)
T-on his own (PT conferences)
W-on our own (DH mentors on Weds.)
Th-pulled bbq chicken sandwiches with slaw made with russian dressing on whole wheat toasted (it's DELISH-sauce made from scratch)
F-most likely a friend's...or..out
This is an unusual week...

work in progress so bear with me!
Saturday night- ropa vieja with brown rice
Sunday-baked ravioli - depending on time
Monday- salmon cakes and roasted broccoli
Tuesday- chicken sloppy joes and homemade oven fries
Wednesday-prob a left over of some sort
Thursday- shephards pie
Friday- prob left overs
Saturday- maaaaaaaaybe those delicious turkey and artichoke stuffed shells.. we'll see!

Sunday- Going to my twin nieces b day party Monday- Take out Chinese Tuesday- Turkey burgers, turkey hot dogs, fries and a salad Wednesday- Chicken, stuffing veggie Thurday- Shrimp and pasta friday- Stuffed peppers over rice Saturday- Going out w/ a family friend for her birthday.

Lazy week.
Sunday: Roast Chicken, Mashed Potatoes, Stuffing, Gravy, Green beans, Cranberry Sauce
Monday: Spaghetti, Meatballs, Salad, Garlic Toast
Tuesday: Baked French Toast, Fruit Salad, Bacon
Wednesday: Turkey Chili, Cornbread, Corn salad
Thursday: Ham Steaks, Red Eye Gravy, Sweet Potatoes, Snap Peas
Friday: Take Away or Catchers Catch Can
Saturday: BBQ Lamb chops, Acorn Squash, Spinach Salad

Wed.- Mexican meatloaf
Thursday- ckn. stir fry although that was my original plan and BIL made for dinner last night...so I'm debating here...

Tonight - Beef Stew in crockpot, salad
Monday - leftovers for DH, salad for me after late yoga class
Tuesday - shrimp scampi, pasta, salad
Wednesday - chicken stir fry, rice, salad
Thursday - takeout - sushi
Friday - leftovers or takeout..I am getting my wisdom teeth out so DH will be on his own as i am eating apple sauce...

This is a lazy week for me too. We have been away all weekend and I literally just figured out my menu for the week.
Mon. - Apple Chicken sausage, scalloped potatos, string beans with almonds
Tues. - Turkey Taco salads
Wed. - Meatloaf, mashed potatos, baby carrots & peas
Thur. - out to dinner for FIL b-day
Fri. - Manhattan Clam Chowder served with crusty bread and maybe a salad
Sat. maybe dinner with friends

Sat- Roast beef, mashed potatoes, corn, gravy salad
Sun- Oven stuffer roaster made with lemon and rosemary YUM, bakes potatoes with sour cream and chives. broccoli bakes with bread crumbs and parm cheese on top!
Mon- Beef and broccoli served over white rice
Tues- Chix cutlets, oven roasted potatoes, salad
Wed- Tacos, and rice
Thurs burger night..
Fri breakfast for dinner!

Finally in our own home and back to cooking!!
Sunday (my family came for dinner)- appetizers (chz and crackers) lasagna with tossed salad, apple pie
Monday- potstickers w/ fried rice and fruit salad
Tuesday- lasagna (I made 2 I have school til 9)
Wednesday- greek salad w/chicken wraps (grilled chicken, lettuce, tomato, cucumber, red onion, peppers, feta cheese, tzatziki sauce)
Thursday- whatever I can scrounge up in the kitchen (leftovers, cereal, mac&chz) School until 9 again...
Friday- turkey burgers on english muffins, twice baked potatos, veggie medley
Saturday- Dinner at Brother- and sister-in-law's
Sunday (DH's family coming over)- Waikiki Meatballs over rice and tossed salad, will bake something for dessert

What are Waikiki Meatballs???
It's an old Betty Crocker Recipe- kind of a hawaiian meatball
Prep Time: 20 MinCook Time: 25 MinReady In: 45 Min
Servings: Original Recipe Yield 6 servings
Ingredients: 1 1/2 pounds ground beef or turkey 2/3 cup crushed saltine cracker crumbs (I just use bread crumbs) 1/3 cup minced onion 1 egg 1/4 cup milk 1 1/2 teaspoons ground ginger (I leave this out cause DH and I aren't huge ginger fans) 1/2 teaspoon salt 1 tablespoon olive oil 2 tablespoons cornstarch 1/2 cup packed brown sugar 1 (15 ounce) can pineapple chunks - drained, with juice reserved 1/3 cup white vinegar 1 tablespoon soy sauce 1/3 cup chopped green bell pepper (I also add red)
Directions: In a large bowl, combine ground beef, cracker crumbs, onion, egg, milk, ginger and salt. Shape mixture by rounded tablespoonfuls into meatballs. Heat olive oil in a large skillet over medium heat. Place meatballs in skillet and cook until evenly brown, and meat is no longer pink. Drain excess fat. In a small bowl, combine the cornstarch, brown sugar, reserved pineapple juice, vinegar and soy sauce. Mix until smooth, then pour into the skillet with meatballs. Cook, stirring constantly, until mixture thickens and boils, about 5 minutes. Stir in the green pepper and pineapple chunks. Heat through.
It's pretty sweet (and not all that healthy) so I serve with plain brown rice...I don't make it often- but my BIL wants to try it.

Sunday- dinner out with my parents
Monday- cilantro lime chicken recipe i found on the recipe exchange on here- sooo good!!
Tuesday-Jarlsberg cheese bisque soup with lots of veggies in it ( brocoli, carrots, celery)
Wednesday- mushroom stuffed chicken, also a recipe i found on here like 2 years ago
Thursday- carne gousada (sp???) DH found a recipe online and wants to try it-- apparently its beef with tomatoes and peppers and onions...

Tuesday: rest of chicken burgers and potatoes
Wednesday: I work late and DH is off so it'll be frozens
Thursday: Maple- glazed chicken with sweet potatoes - I'll be making regular potatoes instead!
Friday: leftover chicken and potatoes
Saturday: Wine trip!

Thurs - Roast chicken with a new side recipe - spinach and dried tomatoes. Got it from one of my healthy recipe books
