Happy Superbowl Weekend!
Sunday: SUPERBOWL - headed out.
Monday: Chicken and Dumplings, house salad
Tuesday: Porterhouse, Baked Potatoes, Roasted Brussels Sprouts
Wednesday: Chicken Burgers on stoneground wheat buns, Cucumber salad, sweet potato fries
Thursday: Spaghetti Pie, House Salad
Friday: Baked French Toast, Bacon, Citrus Salad
Saturday: Turkey Chili, Cornbread, yellow rice
ETA: Did Chicken/Dumplings on Saturday instead.. so tonight is Chicken Fajitas. Saturday is VDAY dinner so packing up Turkey chili for the kiddles and my sister and making Chateaubriand for my hubs and I

Hey J-noot sure how you make your chicken burgers but my DHJ makes AWESOME ones and wanted to share the recipe:
Ground chicken basil-chopped cornichons diced 1tbl of juice from cornichons mayo
Mix up the mayo with everything-use about 1/2 and resrve the rest to top burgers. Topr with tomato slice, basil leaf and mayo. MMMMMMMM

Mon- Chicken dish (either stuffed with spinach and feta, in a lemon sauce or smothered with vidalia onions) over buttered egg noodles
Tues.- Pan fried sea bass, tartar sauce, spinach with garlic and hasselback potatoes (might try)
Wed.- Rigatoni (for DH) Spaghetti squash for me with sauce, and ricotta, salad, garlic bread
Thurs.- Pork tenderloin, rice, broccoli
Fri- ?

Oooh.. that chicken burger recipe looks great! I may make it for myself - and let the kids and Rob have their usual!
As to spaghetti Pie.. I've never made it before. I've eaten it and it's really good! Not so healthy - but I'm gonna see what I can do to lighten up THIS recipe

Sunday- Hoisin burgers w/ ginger , hoisin sauce, cilantro. Home made baked "potato chips" w/ a little bit of olive oil and salt and pepper, and salad. Monday- Baked lemon chicken w/ lemon, garlic, and onion powder. Whole grain chicken flavored rice, and green beans. Tuesday- Baked ziti w/ turkey sausage. Wednesday- Not sure we r getting our taxes done so we will probably go to a dinner - pending no snowstorm. Thursday- Pizza night and salad. Friday- Pot roast, potatoes, and a veggie. Saturday- Chinese food

OK, I seriously need to drop 5-7 pounds and so I am going to have a really healthy menu this week - except for tonight !
Sun: BBQ Pulled Pork sandwiches
Monday: Grilled Snapper Veracruz w/ sauteed zucchini and squash
Tuesday: Split Pea Soup with Ham
Wednesday: Chicken ropa vieja w/ brown rice
Thursday: Out to DInner in the city
Fri: Chicken, green bean and mushroom stirfry w/ brown rice
Sat: Pork chops (havn't decided how to cook) w/ baked sweet potatoes and sauteed Swiss chard
Edited because we decided to go to dinner in the city on Thursday - so Thursday's meal has been moved to Sat. - we'll se how that goes with my diet!

Lentil-Vegetable Soup
This flavorful soup with its protein-rich lentils is substantial enough to enjoy as a main dish. One note: Even though most lentils today are picked clean, sort through them just in case to remove any debris. To add some greens with no extra cooking, chop some baby spinach, and stir it in just before serving. The heat from the soup will just wilt the spinach. 1 Tbs. olive oil 1 medium-size yellow onion, chopped 2 cloves garlic, minced 2 to 3 carrots, peeled and cut into 1/4-inch dice 1 parsnip, peeled and cut into 1/4-inch dice 1 small celery root, peeled and cut into 1/4-inch dice 11/4 cups dried brown lentils, sorted and rinsed 6 cups low-sodium vegetable broth or water 1 Tbs. low-sodium tamari minced fresh parsley for garnish 1. Heat oil in a 5- to 6-quart pot over medium heat. Add onion and garlic. Cover, and cook 5 minutes to soften. Add carrots, parsnip, celery root, lentils, broth, tamari, and season with salt and pepper. 2. Reduce heat to low. Cover and cook, stirring from time to time, until lentils and vegetables are tender, 1 to 11/2 hours. Taste and adjust seasonings, if necessary. Garnish with parsley, and serve.
Tuesday: Some kind of sandwich...avacado slices, tomato slices, 2 kinds of cheeses, rye or sourdough bread and maybe chicken. Going to play that one by ear.
Wednesday: Pasta with homemade sauce (saving some sauce for the pizza for friday) I might also make a partial batch that is a meat sauce.
Thursday: Burger Night with fries! I love Burger Night!
Friday: Homemade pizza
Joined Vegetarian Times online and can't wait to use their recipes!!

Love spaghetti pie!! My mom makes it kind of like this but puts ricotta cheese down on macaroni before the sauce mixture.....not healthy but a yummy comfort food!!!
Usually she uses her leftover sauce and neatballs for the filling....just break up the meatballs.

I didnt go food shopping until Saturday so the menu I posted last week is actually for this week
Sunday - Teriyaki beef filet (got it from BJ's and it was delicious ), sweet potatoes, broccoli w/cheese sauce
Monday - Fusilli a la Caprese -(recipe from Everyday Italian) with breaded eggplant (probably baked since I'm on WW)
Tuesday - Lemon chicken, white rice and spinach
Wednesday & Thursday depends on if DH is going to be home for dinner - Salmon for DH and coconut shrimp for me on Wednesday if he's home and probably pasta on Thursday.
Friday - we have a wedding at Jericho Terrace
Saturday - DH won't be home so I'll probably have a bowl of cereal
