SAT - tonight we're gonig to an anniversary party at our favorite sushi place!

SUN - not sure yet - it's my mom's last night here so we might go out again

MON - didn't get to make this baked shrimp and feta pasta

TUES - lighter chicken enchiladas, yellow rice

WED - spaghetti w/3-tomato sauce, garlic bread

THURS - rojerono's tuscan chicken, couscous, salad

FRI - date night/chef's night off!

Sunday - MIL
Monday - Beach Picnic! Heroes, Chips, Fruit and Pickles on a blanket in front of the fire with lemonade, iced tea and S'mores for dessert!
Tuesday: Spaghetti and Meatballs, Garlic Bread, Salad
Wednesday: Beef Stew with Biscuits and String Bean Salad.
Thursday: Herb Grilled Chicken, Mac & Cheese, Steamed Broccoli
Friday: Mussels in White Wine Sauce, Linguine and Salad
Saturday: Stuffed Peppers, cucumber salad.

MIL Cancelled. So We are doing Spaghetti, Meatballs - and making a beef bracciole today with garlic bread and salad. Leftovers for Tuesday.

ETA: The bracciole came out FANTASTIC. Here's my recipe in case anyone is interested:

First I chopped some salt pork into small pieces and fried it until it was golden brown and crispy and drained on paper towels. Then I used a thin sliced piece of round and pounded it to about 1/4 inch. Then I minced 5 garlic cloves and pressed them into the meat. I topped the garlic with canned bread crumbs, fresh grated reggiano parmesan, I crushed the salt pork in the mini prep and sprinkled that on there and then added a handful of fresh chopped parsley and a few leaves of chopped basil. I rolled up as tightly as possible and tied it in 3 places with a surgeon's knot using kitchen twine. I put the pan that I'd used for the salt pork (drippings still in it) to a high heat and browned the meat all over. Then I dropped it right in the sauce. The sauce had only just really started (I hadn't even made the meatballs yet). So it probably simmered in the sauce for a good 2 hours or more. It was really delicious! Mon - spaghetti and meatballs with green beans and garlic bread
Tues - chicken legs, rice and veggie
Wed - boboli pizza
Thurs - fettucine/spaghetti and alfredo sauce with peas
Fri - chinese

Mon--Crockpot Italian Herb chicken over rice and salad
Tues--out for me for book club, DH on his own
Wed--Salad, pasta and meatballs
Thurs--Chicken sausage, onions and peppers on rolls, some veggie?

Sun: Potato Leek soup, marinated steak strips, brocolli

Next week, I want to make fettucine with shrimp, peas and cream sauce.

Mon: Cranberry dijon pork loin, minted pea salad, brown rice.

Tues: Night out

Wed: Leftovers

Thurs: Smoked chicken, arugala, pesto and provolone paninis, salad.

Fri: Cheese tortellini alfredo w/peas and pancetta, garlic bread.

Sat: Meatloaf, roasted potatoes, mushroom onion gravy, sauteed green beans w/garlic, dinner rolls.

I am going to add my menu, knowing it will probably change and I am jealous of all your menus!

Sunday - Oven Roaster, stuffing, roasted broccoli

Monday - sloppy joes

Tuesday - chicken thighs, rice, green beans

Wednesday, Chicken and broccoli in penne with garlic and oil

Thursday - tacos and mexican rice

Friday - White pizza

Saturday - Skirt Steak, mac and cheese

Sun: Chicken Quesadillas

Mon: leftover Sloppy Joe meat added to pasta, sauce that Im cooking today, zucchini and red peppers - Im hoping this will come out ok..

Tues: Pillsbury Pizza - plain on DH half and broccoli, spinach, red peppers on my half

Wed: Crock pot pork chops & mashed potatoes
Sour Cream Pork Chops

Thurs: Italian Wedding Soup

Friday: leftovers

Thursday: Baked Salmon with Pecan Pesto and Mixed Veggies

Mon: Stuffed acorn squash with rice or orzo

Tues: Hamburgers on the grill and baked oven fries.

Thurs: Grilled Cheese and Bacon and Soup

Fri: Chef's nite off!!

Sat: Had DH's family over - made roasted chicken, roasted carrots, asparagas, and green beans

Sun: Roast beef with leftover veggies

Mon: Leftover chicken and veggies and probably some cauliflower

Tues: out to dinner

Wed: Last of Roast beef/chicken

Thursday: Asian chicken stirfy with broccoli

Friday: Both of us are going away for the weekend

I also made a homemade chicken soup for lunches this week

Monday: Simple grilled salmon w/ orzo and asparagus

Tuesday: Chicken and white bean chili, cornbread, sauteed greens

Thursday: take out or leftovers

Friday: Cacio e pepe (spaghetti w/ pepper and cheese), caprese salad

This week I have a few ideas / receipes from you wonderful ladies!

SAT - Beef au Poivre, Gruyere au Gratin Potatoes, String beans w/ carmelizied onion & almonds
(it was outstanding!)

SUN - Spaghetti Pie, Stuffed Artichoke, Italian Salad

MON - Chicken Tortellini Soup w/ crusty bread

TUES - Pretzel Crusted Chicken w/chedder mustard sauce, couscousn baby carrots

WED - Turkey Meatloaf, Mashed potatoes, roasted broccoli

THUR - Chicken & Dumplings

FRI - Date Night!!! Seafood place!

these are all weight watchers friendly meals:

Mon- Chicken Taco Chili (made in the crockpot, so easy)

tues - out

Wed - Chicken and stuffing w/sage and chives

Thurs- cream of asparagus soup and baked potatoes

Fri - going to my parents

Sun: nothing Chat Icon we had late lunch burgers at the dinner

Mon: braised pork chops, mashed potatoes, corn, salad

Tues: hanger steak, roasted brussel sprouts, pommes frites

Wed: Chat Icon dinner with friends (I think) dh- ??

Thurs: pasta with meat sauce, sauteed spinach

I love this thread! Each week it inspires me to plan out my menu ahead of time!

Sunday: Homemade sauce and meatballs with pasta

Monday: Chicken Marsala topped with asparagus and melted fresh mozzarella, with a side of brown rice

Tuesday: French Dip Sandwiches (haven't figured out a side for this yet)

Wednesday: Chicken and Mushrooms

Thursday: Pierogies

Friday: Buffalo Chicken tenders with fries

Saturday- usually have take out

Sunday: Grilled Chicken in low carb wraps with Cilantro, Sour Cream, Avocado, Tomato and cheese.

Monday: Making Filet Mignon tonight that I got at Trader Joes this weekend. Mashed Butternut Squash and sauteed spinach.

Tuesday: Goat cheese and arugala stuffed chicken breast with whole wheat cous cous and baby bella mushrooms.

Wednesday: Garlic Shrimp, mashed cauliflower and a baby spinach salad.

Thursday: Skinless thighs with lemon and garlic. Hummus and olive tapenade and whole wheat pita triangles.

Friday: Whole Wheat pizza with feta, spinach, calamata olives, and tomato sauce.

Saturday: Ordering in sushi before we go out for drinks.

Pork Chops, potatoes seasoned w/paprika and a veggie

BBQ chicken legs & wings, sweet potato fries and corn

Crunchy onion chicken, spinach, mashed potatoes

Kielbasa, perogies and baked beans

Salmon (for DH), coconut shrimp (for me) and parmigiana risotto
