Turkey Gravy Help PLEASE...

Hi,

Maybe this sounds like a trick question but it really isn't. If I'm to get from a Butcher a Turkey BREAST to make for a dinner which in turns means no juices from it, how can I make a homemade gravy? All recipes say add flour and turkey stock to the drippings but without drippings is there a substitute? I really like a thick rich tasting gravy, can anyone suggest anything? I really want homemade, not yucky store bought.

since you aren't going to get a lot of drippings, I would roast carrots, celery, & onion in the pan... add turkey broth as needed to not burn it... then use that to turn it into gravy.

I would baste the turkey breast with a combo of melted butter and turkey broth.

eta: ask the butcher if he has any turkey neck bones/giblets/hearts ... add that to the bottom of the pan when the breast roasts .. that will help with the rich flavor...

Thanks, I just called my butcher (now thought of this too) to ask him to save me some skin. But, as for the turkey broth (it's broth, not stock)? And.. I only found chicken stock not Turkey in three supermarkets I looked!

for thanksgiving, I had no drippings to make my turkey gravy. So, I just made a roux from flour and butter and then added chicken stock and let it reduce to desired consistency. Added salt and pepper. It was delicious. And went with the turkey perfectly.
