Re: Tomato sauce...
Sautee chopped onion and garlic in olive oil. When soft I add italian seasoning and some red wine (if I have it) and a tablespoon of sugar and reduce. Then I add a box of Pomi chopped tomatoes and then a 28 oz can tomato puree. Then I let it simmer for as long as I can.

Re: Tomato sauce...
Saute 8-10 cloves of garlic (sliced in half long ways) in olive oil in a wide skillet. Before the garlic starts to brown, add a can of Cento San Marzano plum tomatoes. Crush the whole tomatoes with the back of a wooden spoon. Add 1/4 of a can of water, splash of red wine, lower heat to a simmer, cover and cook for about 15 minutes. The last five minutes add a large handful of chopped basil.
or
saute half a chopped onion in olive oil until soft. Add 8-10 cloves of chopped garlic and cook until just before it starts changing color. Add 3 lightly browned italian sausage links. Add two cans of cento san marzano tomatoes with a handful of chopped basil with salt and pepper. Add a half can of hot water and half a can of tomato paste. Salt and pepper to taste. Cover and simmer for an hour or so.
It all depends on the kind of sauce you're looking for. The only time I would ever add oregano to my sauce is if I am using it on pizza.
