Tilapia dish needed!!

I've done a parmesean crusted tilapia...and some other ways..but looking for a new way..
any ideas.. it can be a very boring fish!!Chat Icon

Season with salt and pepper. Dredge in flour. Heat equal parts oil & butter over medium. Brown fish on both sides and remove from pan. Deglaze pan with some white wine, then throw in a splash of chicken stock and some freshly squeezed lemon juice. Add in capers if you want. Put fish back in, and top with slices of lemon and some chopped fresh italian parsley. Cook a few more minutes until fish is done. YUM! It's really good Chat Icon

I have made this once before and am making it tonight. It's a glazed tilapia, DH loved it...

3 Tbs. rice wine vinegar (red wine vinegar works too)
1/4 cup light brown sugar
1/4 cup + 2 Tbs soy sauce (low sodium)
1 1/2 tsp cornstarch dissolved in 1 Tbs. water
4 fillets white fish (I used tilapia)


Whisk together all ingredients in sauce pan over medium heat until thickens – about 2-3 minutes
2) Preheat broiler and position rack on top (about 6 inches from broiler)
3) Place fish on foil lined baking sheet. Spoon teriyaki glaze over fish.
4) Broil for about 8 minutes (depending on thickness of fish) until no longer opaque in center. Baste fish with glaze about half way through.

I have been making my own version of Oreganata!

i apologize that i don't measure when i cook!

Put in food processor:

a few cloves of garlic... first chopp them
then add:
bread crumbs
wine
lemon juice
oregano
black pepper
pinch crushed red pepper
italian seasoning

put tilapia in baking dish and spread the pastey mixture on top. i pour a little wine in the bottom of baking dish and put a little butter in there too.

bake for 20 minutes or so, then i put the broiler on for a few minutes to brown/crisp the crust!

DELISH! DH LOVES THIS!

I use this with shrimp also. So good.

I coat both sides of the fish with Emeril Lagassi's Essence (you can get the recipe on foodnetwork.com or I bought a big bottle of it at BJs). Then I sauté in a pan with some oil and butter.
