Tilapia
I have some frozen tilapia in the freezer...any quick and easy ideas to make with it?

During Lent I do this a lot: Grill/Broil with butter, salt and pepper. Make a homemade tartar sauce and serve on a buttered, toasted roll with bibb lettuce, tomato and red onion.

the easiest way I do it is to marinate it. I like the asian sesame dressings. Then I make a little packet out of foil and bake for 15-20 min on 350

tilapia piccata
heat equal parts extra virgin olive oil & butter over medium heat. dredge tilapia in flour seasoned with salt & pepper. brown on both sides and remove from pan. deglaze pan with some white wine. add a splash of chicken broth and the juice of half a lemon. when it reduces a bit, add some lemon slices & parsley and add fish back in and cook until cooked through.
you can also add capers to that and an extra swirl of butter at the end.
