The Ultimate Recipe: Pumpkin Pie!!
I've GOT it!!!!!!!!
This is my fifth and final pie... it took me one week but I did it! I found the perfect pumpkin pie recipe -- and it is husband tested AND approved!!! I had the brainstorm to marry the two delicious Paula Deen recipes into one 'mega-recipe'
I felt that the traditional Paula pumpkin pie was missing the delicious dry spices of the yummy Paula Apple Butter Pumpkin pie. So, I made the traditional and added the dry spices from the Apple Butter. I also added a little baking time and a wee bit of ground cloves... and... PERFECTION!!!!!!!!!!!!!!!!!!
It's just so creamy yet spicy yet pumpkin-y. YUM!
THE RECIPE:
Ingredients •1 (8-ounce) package cream cheese, softened •2 cups canned pumpkin, mashed •1 cup sugar •1/4 teaspoon salt •1 egg plus 2 egg yolks, slightly beaten •1 cup half-and-half •1/4 cup (1/2 stick) melted butter •1 teaspoon vanilla extract •3/4 teaspoon ground cinnamon •3/4 teaspoon ground nutmeg •1/8 teaspoon ground ginger •1/8 teaspoon ground cloves •1 pre-made pie dough (Whipped Cream for topping - OPTIONAL)
Preheat the oven to 350 degrees F
In a large mixing bowl, beat the cream cheese with a hand mixer (It should be room temp -- soft -- and I usually put it in the microwave for 20-30 seconds to soften it and make it easier to beat - it should be very creamy, no lumps). Add the pumpkin and beat until combined.
Add the sugar and salt, and beat until combined. Add the eggs mixed with the yolks, half-and-half, and melted butter, and beat until combined.
Finally, add the vanilla, cinnamon, nutmeg, cloves, and ginger, and beat until incorporated.
Pour the filling into the warm prepared pie crust and bake for 55-65 minutes, or until the center is set. Keep in mind, you are going to fill it to the brim and you WILL definitely have some left over -- so don't worry if you have extra, there's NO way to fit it all. I usually put the pie on a regular cookie sheet and then pour, then I take the whole cookie sheet and carefully place in the oven so if it spills a bit no biggie.
BAKE. Then, place the pie on a wire rack and cool to room temperature... I always leave it overnight. I just feel it comes together better overnight. Cut into slices and top each piece with a generous amount of whipped cream (optional). I'm not a whipped cream person but if you are, it is delicious!

thanks for taking one for the team and test-driving all these recipes! i think we're going to give that apple butter recipe a spin this year. i've always used the libby's recipe in the past.
the cream cheese recipe sounds pretty close to the filling for pumpkin cheesecake.
