Super-easy Pumpkin Spice Muffins

Made these last night.

One box of Spice Cake mix
One can of pumpkin (NOT pumpkin pie filling)

Mix really well.

Bake in muffin pan. It took about 3-4 minutes longer than the recommended time on the box.

I added in about 1/4 c of chopped walnuts and 2 oz. of dried cranberries for some extra flavor.

It'd turn out a bit more pumpkin-y with a little pumpkin pie spice added, I just forgot to put it in there.

Two Points each without the added nuts/cranberries. I count half-points so I count them as 2.5 to be sure Chat Icon

Made the house smell great, too!

I make mine with chocolate chips--probably defeats the purpose of being Weight Watchers friendly!!

Just a word of caution these are VERY moist so they tend to mold pretty quickly. I will leave out enough for 3-4 days and freeze the rest.

I was JUST going to ask if they are moist. I made homemade pumpkin bread last week and it was very dense yet dry.

So making these this weekend!
