Stuffed peppers
Anyone have an easy recipe for stuffed peppers they want to share?

I have a quick version.
Steam 4 green bell peppers, cleaned out and set aside.
Combine 1 1/2 cups of cooked brown rice w/1 (or half) can black beans, 1/2 cup salsa, 1 packet taco seasoning. Scoop into peppers and top w/cheddar cheese. Pour 1 can enchilada sauce over the peppers and in the bottom of pan. Bake at 425 until bubbly and peppers are soft.

Crock pot stuffed peppers:
I use ground chicken, cooked rice, 1 egg, italian seasoning.. stuff the pepper and top with tomato sauce. Put some on the bottom of the crock pot too.
put on low for 7 hours while at work.. delic!!!!

Cheater version..
Clean and seed peppers. Pour a can of Hunts Plain Tomato Sauce in a baking dish, put the peppers (empty) in it and put in the oven. You can cook them to the desired tenderness. If you like them with some bite take them out sooner.. if you like them really soft.. wait to take them out until they have the right feel.
Meanwhile.. make rice. I use plain Carolina rice but I cook it in beef broth.
In a Dutch Oven or any pot/large enough pan - sautee some garlic and a chopped onion in a little warm olive oil for a minute or 2 to sweat them. Dump in a package of ground turkey and brown it. Add some Freshly Ground Pepper and Beef Boullion/Paste. Add Worcestershire sauce.. don't be shy with it. Stir in can of Hunt's tomato sauce. Add cooked rice, some Gruyere cheese and half a bag of frozen peas and stir. Cook for about 10 minutes.
Put meat mix in pepper shells top with Hunt's tomato Sauce and Gruyere cheese. Put in oven and bake off until cheese is melted.
Serve.
