Spinoff to the cake posts-Babies with milk and soy allergies

DD is being tested in the next month, but this question is more for me. My 30th is in two weeks and we are still dairy and soy free here.

Does anyone know of any cakes or bakeries that make dairy, soy and nut free cakes? Also egg free if we don't have DD's results or test done by March 1?

Please don't move to food!

I've heard that the Cake Gallery in Bellmore makes dairy free cakes but I've never looked into them myself, and I'm not sure about the other allergens.

I usually make my own. They aren't fancy but I worry too much about cross-contamination.

I do trust the cupcakes and cookies from Divvies

Thank you! Definitely not opposed to making a cake! I bake a ton over here and will bake most things on the dessert table at her birthday party, so I would love to have some allergy friendly options!

I actually managed a pumpkin pie recipe, brownies, cookies, carrot cake muffins. Never tried a cake though. I can send you whatever I have if you want. The cookies and brownies are courtesy of Bethenny Frankel's Skinnygirl Dish.

Here is the carrot cake one-it is actually from January's Food and Wine and it is technically supposed to have cream cheese frosting, but I doctor everything and I just did these without and they were incredible!

Take 5 Carrot Cupcakes
1 cup all purpose flour (I try to use whole wheat when possible)
1 1/2 teaspoons cinnamon
1 tsp baking soda
1/2 tsp salt
2 large eggs (if you are egg free, you can sub applesauce-i do 1/4 cup per egg, but I use eggs in these)
3/4 cup canola oil
1 cup sugar
1 tsp pure vanilla extract
1 1/2 cups finely shredded carrots (about 6 medium carrots)

Preheat oven to 350 degrees and line 14 muffin cups with paper liners (you don't have to-you can just grease them with canola oil). Spray liners with vegetable spray (it has soy lecithin FYI if you can't have soy).

In a medium bowl, whisk flour with the cinnamon, baking soda and salt. In a large bowl, using an electric mixer, beat the eggs with the canola oil. Gradually beat in the sugar at medium high speed and beat until thick, about 3 minutes. Beat in the vanilla. Fold in the dry ingredients with a rubber spatula and then fold in the carrots. Spoon the mixture into the cups and cook 25-30 minutes until a toothpick inserted in the center of the cupcake comes out clean.

I have to look to see where i put my copy of Skinnygirl Dish and I will get you the brownies tomorrow (they are called brownie cookies, but can be made in a pan). I think I know where it is, but my back is killing me!

I had to make a cake for DS's 1st Birthday. Duncan Hines makes dairy and soy free cake mix and frosting...I had a regular cake for everyone else and let him go to town on his!!!

Simple Vanilla Icing

2 cups sifted powdered sugar
4 tablespoons butter or margarine, melted (I use Earth Balance Soy & Dairy Free, the red one).
2 to 4 tablespoons milk or water
1 teaspoon vanilla extract

1. Combine all ingredients with enough milk or water to the desired consistency, less milk for a thicker consistency, more for thinner.

Makes about 2 cups.

Cook's Notes:

* This is a very forgiving recipe, if it becomes too thin add more powdered sugar and too thick add more liquid until you're happy with it.
* Need less icing? Recipe can be successfully reduced by half.

Variations:

* Butter-Rum Icing: Omit the vanilla and add 1 teaspoon rum flavoring.
* Lemon Icing: Stir in 1/2 teaspoon grated lemon peel and replace milk or water with lemon juice.
* Orange Icing: Stir in 1/2 teaspoon grated orange peel and replace milk or water with orange juice.

I was thinking about this the other day and my Great Aunt made me a cake over the summer that you can eat on the elimination diet. It's called a "Depression Cake". Absolutely delish! Google it and you will find tons of recipes. I'm going to start trying them out so I can make Trip's first bday cake (I'm trying to do the fondant myself too, let's hope it goes well Chat Icon ).
