Fresh ground p.b. is the only way to go.
I keep a jar of Jif around for baking -- a lot of recipes specifically say not to use the fresh ground stuff.

Skippy. And I'm ultra territorial about it. Jif was on sale at Stop n' Shop last week and my FH threw a jar in our cart and I threw it right back out and took a Skippy jar that was twice the price. You don't mess with a vegetarian's peanut butter! Girl needs her delicious protein!
