Shredded Chicken
Lettuce wraps. You can flavor them so many ways but I like shredded carrot or cabbage, hot sauce,and a little blue cheese.

1 can of fat-free refried beans
Cooking spray
8x8 pan
Season your shredded chicken Mexican style
tomatoes, onions, peppers, chiles, finely diced
cheese
Spray the pan with some cooking spray. Spread out beans into the bottom of the pan, bake at 400 for 10 mins. Remove from oven. Spread chicken in a layer on top, top with veggies, then cheese. Bake at 400 for 10 minutes or until cheese is melted and bubbly.
I call it Taco bake!
