Re: sausage and peppers help
I don't really follow a recipe... I saute peppers and onions until they are tender with a little bit of olive oil, salt and pepper. I grill the sausages until they are crispy, cut them length wise and let them finish cooking in the pan with the onions and peppers. Really simple, but this is how I like mine!! Many recipes call for tomato paste, but my family has never done it that way.

You just do the same sauteing as above - and at the end add in tomato sauce.

Re: sausage and peppers help
I buy one package of hot and one of sweet. Cut them into 4-5 pieces each, saute with olive oil, salt and pepper until slightly browned. Set aside.
Put a mixture of cut up Italian Peppers and Green Peppers in pan with onions and minced garlic, add salt and pepper (as desired, I like salt).
Add sausages, mix well, add can or two of stewed tomatoes.

Re: sausage and peppers help
I cut the sausage into pieces, brown in EVOO, remove from pan. Then I sautee the peppers, onion and garlic in the dripping, add some black pepper, sometimes some italian seasoning. Then I add the sausage back in. We prefer no tomato sauce, but if I was to make it with it, I would just add it at the end and let it simmer a bit.

I do this, put it on italian bread and top it off with fresh mozzarella..

Re: sausage and peppers help
I sautee peppers and onions, I boil the sausage, then then slice them so they finish browning in the pan. Sometimes I'll add a can of diced tomato, sometimes not....

Re: sausage and peppers help
i do mine in the crock pot, comes out so flavorful and juicy!
brown the sausage in a pan or bake in over until cooked about 75%. i do one package hot one sweet ( i cut the hot on an angle so you know the difference)
slice sausage into 5-6 pieces per link. put in crockpot.
slice up desired amount of onions and peppers
one can tomato paste 2 cans diced tomato with seasoning 1 large can tomato puree 1 can plum tomato
1-2 cups chicken stock (depends how thin you like the sauce) 1/2 cup red wine fresh basil 2 cloves garlic sliced black pepper to taste italian seasoning to taste
cover and cook for at least 4 hours on low
