Roast beef recipe
Anyone have a good one for an eye round I guess??? TIa

I don't really have a recipe.
I season the heck out of it with pepper and garlic, stick it in the oven fat side up at 350 and let it cook for about a half hour. Then I add half a bottle of beer to the bottom of the pan. After about another half hour, I add the rest of the bottle and let it continue cooking for about a half hour after that.
To make the gravy, I just make a roux of flour and water and stir it into the juices while the meat rests.
If you don't want to use beer, you can use wine or broth.
ETA: I usually make a 3.5ish lb roast, it comes out medium rare after about an hour and a half at 350.

Preheat oven to 350. Take roast out of wrapper, rinse it, pat dry, line pan w/ foil, put a little bit of oil on roast, rub it in, add some kosher salt, black pepper, garlic powder, onion power and some tiny pieces of onion on top. Stick in meat thermometer, add a little bit of water on bottom of pan, cover w/ foil -like a tent the first 30- 45 minutes depending on size of roast, then uncover it. Cook until done. the water on the bottom will catch the drippings and you can make gravy out of it in the end. HTH Enjoy!

I used that on Christmas and it was delicious. I coupled it with a red gravy that my great aunt used to make:
1 can tomatoes (liquified) 1 small bottle ketchup 4oz Worcestershire sauce 1 onion 1 green bell pepper salt and pepper to taste
Sautee onion and pepper in a large pot with olive oil until tender. Add rest of the ingredients and cook for 1 hour (or more - the longer it cooks, the better it gets).

I use this method and create a basic brown beef gravy using the drippings, flour, gravy master, beef stock and a little s&p to taste.
