risotto...and what else?
i'm making wild mushroom risotto with salad and a french apple tart for dessert this sunday for my MIL's bithday.
what else do you serve? i feel like it's weird to have something starchy like risotto alone.

i usually just roast chicken, grill chicken breast or make a steak on the side....i don't usually have risotto as a main dish.......although, most people tend to make risotto the main dish since they love it haha

I made butternut squash risotto with a simple roast chicken for dinner last night.
one whole chicken, chopped/smashed garlic underneath the skin, topped with salt, pepper, thyme, and olive oil (could also do butter) cavity stuffed with a few cloves of garlic, half an onion, and half a lemon. oh, I also squeezed the other half of the lemon over the outside of the chicken.
didnt' have to tend to it again until it was ready, which is great since the risotto is so labor intensive!

thanks for the suggestions, girls! i'm going the roast chicken route. it feels like it fits right in for october. with the salad and the apple tart, i think it's going to be fab
ETA: the barefoot contessa would be proud, and that's usually my ultimate goal.
