Red potatoes
I have about 6 or so pounds of red potatoes from my farm share between the last 2 weeks. Any suggestions on what to do with them? I made potato & leek soup last night, doing pot roast tomorrow night. Any other suggestions? Preferably something healthy (and nothing with cheese, I can't have it) because I'm trying to lose weight. Thanks!

I was going to suggest these as well...except there is an even simpler version out there (just uses one pan, you steam them in the oven and then bake them in the same pan)...I will post it when I find it.
ETA: This is the other one I was thinking of, but looking at it again, it's not really any easier than the pioneer woman recipe.

We have them from our farm share too and are just boiling, smashing them and adding some butter and fresh parsley. I prefer dill but DH isn't a big fan of dill and prefers parsley.
