Quinoa Ideas
Does anyone have any recipes for Quinoa that they are willing to share?
I generally just boil some quinoa and add peas to make a quick dish for my daughter who is 15 months when I make it for my daughter. Looking for some ideas that my husband and I can enjoy too so that I can make it more often

I add feta, lemon juice, chopped spinach, and pan roasted pine nuts with garlic in olive oil. I also chop or shred baked chicken (sprayed w olive oil, then salted and seasoned with onion and lemon zest). It's soooo good.

Tomato-Basil Quinoa
2 tsp olive oil 1/2 yellow onion, diced 2 cloves garlic, minced (I use more) kosher salt and freshly ground black pepper 8 oz. can tomato sauce (I use homemade usually) 1 cup water (can use fat free, low sodium chicken broth as a substitute) 1 cup quinoa, rinsed and drained 2/3 cup shredded Parmesan cheese 1-2 tomatoes, cored, seeded, and diced 2 Tbs chopped fresh basil (I use more)
Heat the olive oil in a medium saucepan over medium heat. Add the onion and cook, stirring frequently, until softened, about 5 minutes. Add the garlic and cook, stirring constantly, until fragrant, about one minute. Season with salt and pepper.
Add the tomato sauce and water to the saucepan and stir in the quinoa. Bring to a boil, stirring occasionally. Reduce the heat, cover, and cook until the quinoa is tender but still chewy, and white spiral-like threads appear around each grain, about 15 minutes.
Remove from heat and allow to sit about 5 minutes. Stir in the Parmesan cheese, tomatoes, and basil, and season with salt and pepper if necessary. Serve.

The sounds delicious. I usually do a similar cold dish with lemon juice, feta, cucumbers, bell peppers, tomato, and cilantro (or whatever veggies I have on hand really). It makes a great lunch in the summer.
I just made some veggie quinoa bites. Add chopped fresh spinach, grated carrot, garlic, shallot, an egg, and seasoning to cooked spinach. Scoop into a greased mini muffin tin and press down. Then bake 15-20 minutes at 350.

I just did a slow cooker one with chicken broth, grape tomatoes, feta, baby spinach, chopped almonds and cranberries...delicious!

Quinoa Ideas
Ingredients
1 cup quinoa dry (cooked to package instructions) 1 Cup cooked butter nut squash a few springs of fresh cilantro diced (optional) 1 small onion diced 2 inch piece of ginger minced (optional) 1 garlic clove minced 1/2 tsp salt 1/2 tsp pepper (instead of this I like to add diced hot peppers) Quarter cup of green and red bell peppers for color (optional)
Directions
Preheat oven to 350 degrees Combine all ingredients and mix in a large bowl Make mixture into small patties Place the patties on a large baking sheet covered with foil that is sprayed with oil so the patties won't stick to the baking sheet Spay top of patties Bake for 12 minutes, then flip burgers and spray with oil again Bake for another 12 minutes. Broil for 5 minutes at the end to get a nice golden brown color

This looks REALLY yummy. Just bought tons of basil, so definately going to make this.

Quinoa Ideas
I like it with chopped tomato, avocado, some onion, chickpeas, grilled chicken, salt and pepper and then drizzled with EVOO and balsamic vinegar.
