Potatoes?
What are some ideas for preparing potatoes? Easy ones? I'm not into just baked potato, but don't want to take the time to make mashed.

Quarter 8 small red potatoes and put them in a foil lined 8x13 pan.
Mix with 1/3 cup Olive Oil and 1 package Lipton Onion Soup mix.
Cook for 30 minutes at 400, stirring occasionally.
DH LOVES these!

Crash Hot Potatoes by Pioneer Woman. It's like this amazing cross between baked and smashed. I loooove them. I decorate them with cheese or sourcream and chives or bacon or whatever. Delicious.

Lemon potatoes -- peel and cut up a few potatoes, sprinkle with salt, pepper, oregano, chopped garlic and toss in some olive oil (enough to coat all potatoes), put in a baking dish, let them brown in the oven for 15 minutes then pour a half can or full can, depending on how many potatoes, of chicken or vegatable stock into potatoes, squeeze one lemon onto potatoes and let them cook uncovered until potatoes are cooked and liquid is absorbed.
If potatoes are still raw, I add a bit more stock until theyre soft.

Mashed potatoes can be really quick too!
If you peel and dice the potatoes into small cubes... they don't take long to boil.
Just put on a pot of salted water. Once it begins to boil, put in the diced potatoes and it will only take 15-20 minutes until they are tender.
I put them into the kitchenaid mixer and add chicken broth, onion & garlic powder. I whip them up until they're light and fluffy then add in some cheddar cheese & scallions.

au gratin potatoes are actually pretty easy, espeacially if you have a v-slicer or mandolin!
mashed potaties - you can even cut them small pieces in the morning/night before and keep them in a pot of water so when you get home you just turn the stove on!
home fries - sautee with sliced onion, garlic powder, salt/pepper and paprika.
potatoe pancakes - a little more time consuming
twice baked potatoes!!!

Quarter about 5 potatoes. Season with olive oil and just about any mix of spices in the spice cabinet. Roast at 475 until crisp and golden.

I cut Yukon Gold Potatoes into 1/8s. Then I boil them until they are tender when poked with a fork. After boiling, I drain them and place them in a pan with a little bit of oil. I add Italian Seasoning into the pan and toss the potatoes around. I cook them in the pan until they are browned!
Definitely not hard to do and I think they're delicious!

i made this tonight and it was sooooo easy!!! it came out so good, even my DH loved it. I used red potatoes and left the skin on and it was delicious! thanks!
btw, was that supposed to be onion powder? i used chopped shallots and it was really good.
