organic and health concious moms
I want to make a healthier vanilla cupcake with vanilla frosting for DD's 1st birthday, something that I won't mind her eating besides the boxed kind I am going to make for the masses. Any suggestions or links?

For birthdays, I let health-conscious go out the window. Real cakes with real sugar for us. But I make everything from scratch, so there's no preservatives or anything like that.
If it's just for your kiddo, you could always do a quick bread type cupcake/muffin instead - Zucchini or banana.

They have better versions of cake and brownie mixes in the natural foods aisle of stop and shop and in health food stores. Are they good for you...no it's still junk food but they don't have high fructose corn syrup and a bunch of other chemical junk. You can also use this Recipe And use organic ingredients.

i am not really either with a lot of stuff  but i bake everything from scratch so i guess if you want a more organic cake you could alway find a recipe off online and replace all the ingredients with organic one

I love Annie's Eats vanilla bean cupcake recipe. I've been using it every year for my kids' cupcakes and cakes, and it gets rave reviews.
Vanilla Bean Cupcakes Recipe
For vanilla frosting, I follow the one on the side of the Domino's confectioner's sugar box. If you prefer to make the frosting organic, you can always swap the Domino's sugar out for organic powdered sugar.
ETA: It's not a "healthy" cake per se, but I like making it from scratch without anything processed.
