OK....Let's have your cookie list for 2010

I'm still deciding. I've got so many recipes marked but I don't know if I can make them all.

Rainbow cookies for sure!
I think I'm going to try peppermint bark and almond toffee bark this year instead of fudge since I always screw that up.

I made these yesterday from the food networks 12 days of cookies, they are DELICIOUS!! & SO easy to make

ITA!!!!

So far I'm making:
Candy cane bark with white chocolate
Rocky Road

Raspberry Cake Bars

Glazed Lemon Ricotta Cookies

I may try:
Biscotti

But I would use Pomegranate Crasins instead of the cherries

I'll edit as I figure out what else we're doing

eta: I also got those recipes from the 12 days of cookies. Now that I see the picture....I may make the Turtle Grahams as well. My DH would love that

How do you make peppermint bark???



the peppermint bark recipe i've used is:

melt semi-sweet chocolate and spread on a cookie sheet that's been covered in plastic wrap.
melt whitel chocolate and put on top of the chocolate.

before it sets up sprinkle crushed peppermint candy on top.

once it's all set up, break it the way you would break peanut brittle.

that's it

CHOCOLATE RASPBERRY CRUMB BARS

1 cup (2 sticks) butter, softened


2 cups flour


1/2 cup packed light brown sugar


1/4 teaspoon salt


2 cups (12-ounce package) semisweet chocolate chips, divided


1 (14-ounce) can sweetened condensed milk


1/3 cup seedless raspberry preserves


1. Preheat oven to 350 degrees. With an electric mixer, beat butter in large mixing bowl until creamy. Beat in flour, sugar and salt until well mixed and crumbly. Press 1 3/4 cups of the crumb mixture into the bottom of a greased 9-by-13-inch baking pan; reserve remaining crumb mixture. Bake until edges are golden brown, 10 to 12 minutes.


2. While bars bake, combine 1 cup of chocolate chips with the sweetened condensed milk in a saucepan. Melt chips over low heat, stirring until smooth. When pan comes out of the oven, pour chocolate over the hot crust. Sprinkle the remaining crumb mixture over the chocolate filling. Drop teaspoonfuls of raspberry preserves over the crumb mixture. Sprinkle with remaining chocolate chips. Return to oven and continue baking until the center is set, 25 to 30 minutes. Let cool and cut into bars. Makes 24 to 36 cookies.

Here ya go!!

White Chocolate Macadamia Nut Cookies

1 cup packed brown sugar
1/2 cup granulated sugar
1/2 cup butter softened
1/2 cup shortening
1 tsp vanilla
1 egg
2 1/4 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
1 package (6 ounces) white baking bars (white chocolate), cut into 1/4- to 1/2-inch chunks
1 jar (3 1/2 ounces) macadamia nuts, coarsely chopped

1) Heat oven to 350°F. Beat sugars, butter, shortening, vanilla and egg in large bowl with electric mixer on medium speed until light and fluffy, or mix with spoon. Stir in flour, baking soda and salt (dough will be stiff). Stir in white baking bar chunks and nuts.

2) Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 10 to 12 minutes or until light brown. Cool 1 to 2 minutes; remove from cookie sheet to wire rack.

My mom and I spend an entire weekend baking every year. This year it'll be the weekend of the 10th and 11th.

We're making:

Rainbow cookies
Pignoli cookies
Peanut butter blossom cookies
Oatmeal raisin cookies
Thumbprint cookies
Mint chocolate shortbread cookies
Snickerdoodles
Red Velvet cake balls
Fudge
Toffee
Raspberry oat bars
Lemon bars

And probably something sweet and salty - one year they were cookies dipped in chocolate and crushed potato chips.
